SE CARACTERIZA PORQUE LAS FRUTAS FRESCAS, TRAS SU SELECCION, SE SOBRECONGELAN A -20 GRADOS C, DESCONGELANDOSE A MEDIDA A QUE HAN DE SER SOMETIDAS A TRATAMIENTO A LO LARGO DE TODO EL AÑO. LA DESCONGELACION SE HACE PARCIALMENTE, PREFERENTEMENTE A TEMPERATURAS ENTRE -6 GRADOS C Y 0 GRADOS C, Y EN ESE ESTADO SE DESHUESAN Y PELAN, ANTES DE SOMETERSE AL POSTERIOR TRATAMIENTO QUE ACABA EN EL ENLATADO. LA DESCONGELACION SE CONDUCE EN UN HORNO DE MICROONDAS, CON HIPERFRECUENCIA, BAÑADO EN UNA ATOMOSFERA A BAJA TEMPERATURA, LOGRADA POR LA PULVERIZACION DE UN LIQUIDO CRIOGENICO, TAL COMO EL GAS CARBONICO, NITROGENO O AIRE LIQUIDO O FREON. EL HORNO ESTA DOTADO DE UN GENERADOR DE ALTA TENSION ELECTROSTATICA PARA UNA MEJOR UTILIZACION DEL LIQUIDO CRIOGENICO.
