Abstract

Un aparato para producir continuamente un zumo de fruta a partir de un fruto entero, incluyendo la cáscara, una cascara de fruta, un residuo de exprimido o un producto congelado del mismo en calidad de materia prima, comprendiendo dicho aparato (a) una troceadora para trocear la materia prima hasta un tamaño que puede hacerse pasar a través de una malla de 10 mm; (b) un depósito dosificador para preparar una mezcla de material de partida mezclando la materia prima troceada por la troceadora con agua o tanto con agua como con un ácido orgánico de ajuste del pH; (c) un calentador para calentar la mezcla de material de partida hasta una temperatura de 20 a 50°C; (d) un depósito de trituración para tratar la mezcla de partida calentada por medio de un homomezclador con o sin la adición de una enzima, a fin de dividir así finamente la mezcla hasta un tamaño que puede hacerse pasar a través de una malla de 3 mm.
