Abstract
Un método para producir continuamente un zumo de fruta a partir de un fruto entero, incluyendo la cáscara, una cáscara de fruta, un residuo de exprimido o un producto congelado del mismo en calidad de materia prima, que comprende (1) una operación de trocear la materia prima hasta un tamaño que puede pasar por un tamiz con un tamaño de abertura de 10mm; (2) una operación de preparar una mezcla de partida añadiendo agua o tanto agua como un ácido orgánico de ajuste del pH, tal como ácido cítrico, al material troceado, (3) una operación de calentar la mezcla de partida hasta 20 a 50 ºC; (4) una operación de dividir dignamente la mezcla de partida calentada hasta un tamaño que puede hacerse pasar por una malla de 3 mm, tratándola para ello con un homomezclador a un pH de 3 a 4 con o sin adición de una enzima, (cuando se añade una enzima en la operación precedente, puede ser innecesaria la adición de una enzima) y calentando la mezcla a una temperatura de 30 a 50 ºC con agitación, realizándosedicha reacción enzimática mediante la utilización de una pluralidad de depósitos de tratamiento con enzima dispuestos en paralelo a fin de no interrumpir el flujo continuo de líquido durante todo el proceso; (6) una operación de eliminar fragmentos grandes de sólidos filtrando el producto de reacción por medio de un filtro que tiene un tamaño de malla de 0, a 1,0 mm; (7) una operación de enviar el filtrado procedente de la operación anterior a un calentador a través de un depósito compensador ( si se desea, después de enviarlo a un separador de sólido - líquido a través de un depósito compensador, y realizar dicha separación de sólido- líquido mientras se mantiene el filtrado dentro del depósito compensador a fin de eliminar así en mayor grado los sólidos suspendidos en exceso o similares); calentar el filtrado a una temperatura de 60 a 100ºC mientras se le mantiene dentro del depósito compensador para desactivar así la enzima, y enfriarlo luego a una temperatura de 10 a 50ºC; y (b) una operación de hacer pasar el filtrado enfriado a través de un filtro que tiene un tamaño de malla de preferiblemente 0,1 a 1,0 mm a través de un depósito compensador para separar materia extraña y enviar el filtrado a un concentrador y concentrarlo mientras se le mantiene dentro del deposito compensador.
