Abstract
Un procedimiento para la obtención de queso y de productos similares al queso, que comprende las operaciones de preparar una composición comestible de proteína-grasa-sales, que está sustancialmente libre de azúcares fermentables, y en la cual la proteína y las sales son capaces de formar una matriz estable para la grasa, tratar una porción de la proteína de la leche con una proteasa, para hidrolizar la porción de la proteína de la leche y para desarrollar los componentes del sabor a queso, y los precursores de éstos, mezclar la proteína de la leche hidrolizada con dicha composición de proteína-grasa-sales, mientras ésta se halla en un estado sustancialmente no hidrolizado, tratar grasa de leche con una lipasa, para hidrolizar la grasa de leche y desarrollar los componentes del sabor a queso y los precursores de éstos, y mezclar la grasa de leche hidrolizada con dicha composición de proteína- grasa-sales y dicha proteína de leche hidrolizada.
