Abstract

Procedimiento para la preparación de harina de soja en bruto, liberada del modo más amplio posible de amargantes, a partir de semillas de soja, por extracción, caracterizado porque la soja aún no extraída se humidifica, con movimiento mecánico, hasta un contenido de agua de 12 a 25% en peso, se somete a un tratamiento térmico a temperaturas de 90 a 120ºC, y después de secado, es liberado del aceite bruto de soja por un tratamiento con agentes de extracción no polares, y a continuación es liberada del agente de extracción.
