Abstract

An alpha-amylase enzyme stable to heat and acids characterized in that (1) it is able to retain at least about 70% of its initial alpha-amylase activity when maintained at 90ºC and at a ph of 6.0 for 10 minutes in absence of added calcium ions; (2) is able to retain at least about 50% of its initial alpha-amylase activity when maintained at 90ºC at a ph of 6.0 for 60 minutes in the absence of added calcium ions; and (3) it is capable of retaining at least about 50% retaining at least about 50% of its initial alpha-amylase activity at a temperature of 80ºC and at a ph of 4.55 in the presence of 5mm of calcium ions during 10 minutes.
