Abstract

Title process uses 40 alpha-amylase units per 100 g solids and comprises (a) partly hydrolysing an aq. starch slurry at pH 3.6-5.0 by heating to >=250 degrees F to give a pdt. of D.E. >5.0 so that the pdt. gives neither a blue nor a purple response to the starch iodine test. The pdt. exhibits improved saccharification properties and rapid filtration characteristics.
