Abstract
Procedimiento de preparación de alimentos, caracterizado por la provisión de pulpa de patata que se obtiene efectuando una etapa de secado bajo condiciones operativas tales que se gelatinice la fracción fécula, en su caso en una instalación del tipo tambor secador que asegure dicha gelatinización, la cual pulpa se incorpora luego en alimentos del tipo constituido por las compotas de frutas, mermeladas, las salsas y preparaciones a base de tomates, los jugos de frutas y las bebidas a base de frutas, las preparaciones de confitería y de pastelería que comprenden frutas.
