Abstract
Procedure, with its performing device, for treating caramel doughs for the manufacture of soft, hard and/or filled caramels, characterized in that the caramel mass passes continuously and in the absence of gases or steam, after cooker and before the cutter or the stamping machine, a tubular container and that, during the passage of the material, the latter is subjected to the following treatments: a) cooling and air conditioning at 90-110ºC; b) adding additive substances and mixing with the caramel mass; c) cooling and air conditioning the dough at 35-40ºC for soft caramels and at 60-75ºC for hard caramels, respectively; d) calibration and discharge of the finished mass.
