Abstract

In the fermentation of wort in a closed, fluid-tight tank under pressure (between 1.5 and 60 p.s.i.) of the carbon dioxide gas produced, the liquid mass is stirred in such a manner as to cause the liquid to follow an invariable cyclic path, the direction and speed of movement of the liquid at any point being invariable and sufficient to keep the liquid in the state of a light homogeneous fluid having a specific gravity ranging from 0.15 to 0.40. The circulation of the homogeneous fluid at rates of from 0.3 to 3 times per minute, may be produced either by a screw or propeller 3 or 9, Figs. 1 and 2, or by the reintroduction of scrubbed carbon dioxide under pressure through line 15 or 19, Figs. 3 and 4, respectively, or by both means. The cross-sectional passage area of the ascending portion of the liquid may be 0.08-0.5 that of the descending portion. As a result the speed of the upward stream e.g. 0.5 to 10 metres per second, may be substantially 2-12.5 times that of the downward stream. In continuous fermentation, the make-up of fresh wort, by volume, per minute represents not more than onehundredth of the bulk. The fermenting wort may be supplied with oxygen.
