Abstract
Procedimiento para la preparación de una sal alcalinotérrea de un éster 2-fosfórico del ácido ascórbico, que comprende añadir un compuesto de metal alcalinotérreo a una solución cruda que contiene un éster 2-fosfórico del ácido ascórbico o una sal del mismo y un ácido fosfórico o una sal del mismo, a una temperatura del líquido comprendida entre 0 y 30°C para ajustar el pH a entre 8, 5 y 10, 5, en el que la relación molar del ácido fosfórico o una sal del mismo respecto al éster 2fosfórico del ácido ascórbico o una sal del mismo en la solución cruda es de 0, 02 a 0, 5.
