Abstract
Procedimiento para la detección cualitativa de aceites vegetales en aceite de oliva. La invención se refiere a un procedimiento para la detección cualitativa de aceites vegetales en aceite de oliva mediante el análisis de ácidos grasos y triglicéridos por cromatografía líquida de alta eficacia (HPLC). En el procedimiento de la invención se utilizan unos nuevos parámetros cuyos valores se comparan con unos valores límites calculados mediante algoritmos matemáticos obtenidos del estudio de numerosos aceites de oliva genuinos de muy diversa composición en ácidos grasos. Mediante este método se consigue una mayor sensibilidad en la detección de aceites vegetales en el aceite de oliva. Para aceites vegetales con alto contenido en ácido linoleico (girasol, colza, soja), el nivel de detección es inferior al 2%, mientras que para aceites vegetales con, alto contenido en ácido oleico (avellana, girasol alto oleico) el nivel de detección oscila entre el 3 y e1 10%, dependiendo de la composición del aceite de oliva.
