Abstract

La invención se refiere a la utilización de soluciones acuosas para limpiar cubas de fermentación o de almacenamiento en el campo de la industria de las bebidas, en particular para eliminar los residuos derivados de los procesos de fermentación. Las enzimas son seleccionadas preferentemente en el grupo de las lacasas, peroxidasas, oxireductasas, transferasas, hidrolasas, isomerasa, liasas, ligasas, proteasas y están presentes a razón de 0,001 1% en peso enla solución de limpieza acuosa.
