Abstract
Procedimiento para la esterilización de un producto alimenticio sólido a temperatura ambiente, que contiene al menos grasa y azúcar y cuyo contenido de agua es inferior al 5% en peso, con los siguientes pasos de procedimiento: a) Se calienta el producto alimenticio a una temperatura T1 por encima de su temperatura de fusión Ts. b) Durante un periodo de calentamiento se aplica desde fuera vapor de agua en forma finamente dividida al producto alimenticio líquido y se calienta éste a una temperatura T2, de manera que se mate los microorganismos y sus formas duraderas (esporas) contenidos en el producto alimenticio. c) Al menos durante una parte del periodo de calentamiento se pone el producto alimenticio a una presión p1 aumentada con respecto a la presión atmosférica. d) Se reduce nuevamente el contenido de agua del producto alimenticio a un valor inferior al 5% en peso.
