Abstract

Process for impregnating nutritional elements into natural foods, and the device for its implementation.Depending on the porosity of the food in question, the vacuum process impregnation technique is applied to high porosity foods: in foods with average values the process is reinforced with partial pre-dehydration: low value foods are covered with an edible film that holds the additives.The vacuum process impregnation device has a vacuum chamber (3) with a suppressor (2) and a heat coil (5) a pump (6) that circulates the impregnating solution a tank (7) to prepare it and a mechanised food medium (9) of the natural food products (11).
