Abstract

Procedimiento de elaboración de un lactosuero condensado edulcorado, partiendo de suero de quesería al que se le somete a un proceso de concentración y adición de sacarosa o sirope. Después de una segunda concentración y posterior cristalización, se obtiene el producto final (lactosuero condensado edulcorado) adecuado para la alimentación y comparable a la leche condensada desnatada, ideal para la elaboración de masa para galletas y repostería en general.
