Abstract

Procedimiento de producción de harinas lácticas, a partir de bacterias lácticas, caracterizado porque comprende: la fermentación de una suspensión acuosa de productos amiláceos con bacterias lácticas amilolíticas, incluyendo el medio de fermentación al menos 175 g/l de materia seca en suspensión, de la cual al menos 75 g/l son de un inductor de biosintesis de -amilasa, y al menos 100 g/l de producto amiláceo, a un pH de 4 a 6,5, la recuperación de la biomasa fermentada para obtener la harina láctica bruta, seguida llegado el caso de un fraccionamiento.
