Abstract

Procedimiento para la elaboración de medusas y su transformación en un producto alimenticio, que consiste en la pertinente etapa de separado, limpieza y clasificación de las mismas, conservando el paraguas de las medusas, para posteriormente a su limpieza ser sometidas a cuatro etapas de salado en una mezcla de sal y aluminio en agua, siendo ulteriormente deshidratadas y posteriormente empaquetadas y almacenadas a una temperatura que oscile entre 2ºC y 5ºC.
