EL PROCESO COMPRENDE LA ELIMINACION DE LA PIEL DE LOS TUBERCULOS CRUDOS; LA SELECCION DEL CONTENIDO FINAL DE ALMIDON QUE HA DE CONTENER EL ALIMENTO; LA DETERMINACION DEL PORCENTAJE INICIAL DE ALMIDON EN LOS TUBERCULOS CRUDOS; OPCIONALMENTE EL CORTE DE LOS TUBERCULOS EN RODAJAS; LA INMERSION DE LOS TUBERCULOS EN UNA SOLUCION DE HIPOCLORITO SODICO O ACIDO ACETICO O ALCOHOL ETILICO; Y LA EXPOSICION DE LOS TUBERCULOS A UN PROCESO DE SECADO MEDIANTE LA APLICACION DE UN FLUJO DE AIRE CALIENTE. EL PRODUCTO ALIMENTICIO OBTENIDO MEDIANTE DICHO PROCESO TIENE UN CONTENIDO DE AGUA DEL 10-30 % EN PESO.
