ESTA ENZIMA DE ORIGEN FUNGICO SE PRODUCE POR EXPRESION EN ALTOS NIVELES DE LEVADURA. PARA ESTE PROPOSITO, SE AISLA Y SE SECUENCIA UNA COPIA DE ADNC DEL ARNM QUE CODIFICA LA ENZIMA DE DEXTRANASA DEL HONGO PENICILLIUM MINIOLUTEUM . ESTE ADNC SE TRANSFIERE A CELULAS DE PICHIA PASTORIS. SE HAN OBTENIDO LEVADURAS RECOMBINANTES CAPACES DE SEGREGAR LA DEXTRANASA AL MEDIO DE CULTIVO. LA ENZIMA DE DEXTRANASA OBTENIDA PUEDE USARSE, POR EJEMPLO, EN LA INDUSTRIA AZUCARERA PARA HIDROLIZAR EL DEXTRANO EN JUGOS DE CAÑA PARA INCREMENTAR LA PRODUCCION DE AZUCAR.
