Abstract

The invention consists in the establishment of a process for controlling the final stage of the manufacture of Xixona-style turron (the "boixet" stage (stage involving the container in which turron mixture is beaten, cooked and later finished)), which makes it possible to decide, irrespective of the value of the process variables, the optimum processing time for the product in order to achieve the desired effect without the occurrence of phenomena which adversely affect the quality thereof. This process is based on the control of the temperature of the product during processing or of the moment transmitted per unit of mass to the agitator or combinations of these.
