Abstract

Method is proposed for the control of continuously operating heat treatment plant used for food preservation. The operating parameters (conveyor speed, bath temperature, bath level, pressure) for the process are set and kept constant as long as the heat treatment conditions remain unchanged. The initial parameters of the food to be preserved and the treatment plant operating parameters are measured continuously or determined and used as a basis for the calculation of the heat treatment requirement. If this requirement falls outside the range which is necessary for product quality and preservation then at least one of the heat treatment process parameters are changed to bring the requirement into the desired range.
