Abstract

A fruit juice mixt., which can be frozen to give at least 50% overrun stability and eaten frozen, contains at least one type of fruit juice or fruit juice puree, concentrated or unconcentrated, 0.05-1.5 wt.% of at least one stabiliser (e.g. gums) (pref. 0.35-0.60 wt.%), 0.05-0.15 wt.% soy protein as whipping agent, other ingredients including 0.15-0.80 wt.% organic acids as flavour enhancers and water to give a brix value (= % of soluble solids as natural sugars) of 20-35 (pref. 25).
