Abstract
It consists in the use of pasteurized tiger-nut milk with the addition of fruits in the form of the latter's pulp or their equivalent in natural or concentrated juices, which will give the definitive flavour to the vegetable shake, together with the thickeners, preservatives, flavourings and colourings which are permitted, in order to achieve the desired degree of preservation and consistency for presentation to and consumption on the market.
