Abstract
Die vorliegende Erfindung betrifft ein monophasiges Gel, dass aus einer unpolaren Flüssigkeit im Gemisch mit einem nicht-ionischen Tensid ausgewählt aus Estertensiden der Formel ROC(O)R1 oder RC(O)OR2 oder Ethertensiden der Formel ROR2 gebildet wird, wobei RO den Rest eines Zuckers oder Zuckeralkohols, RC(O)O eine Zuckersäure, C(O)R1 den Rest einer Fettsäure und R2 den Rest eines Fettsäurealkohols bezeichnet. In den angegebenen nicht - ionischen Tensiden ist der Zucker ein C5 oder C6 Zucker, und die Zuckersäure und der Zuckeralkohol eine davon abgeleitete Zuckersäure bzw. ein davon abgeleiteter Zuckeralkohol. Die Fettsäure oder der Fettsäurealkohol weist eine C- Kettenlänge von mindestens 6 auf und das nicht-ionische Tensid hat ein OH- Gruppen zu C-Atomverhältnis im Bereich von 1:3 bis 1:8. Die vorliegende Erfindung betrifft weiterhin Verfahren zur Herstellung entsprechender monophasiger Gele und die Verwendung entsprechender Gele zur Texturierung Von Lebensmittel- oder Kosmetikprodukten oder zur Formulierung von Pharmazeutika.
Description
Monophasige Gele von unpolaren Flüssigkeiten mit nicht-ionischen Tensiden
Beschreibung
Die vorliegende Erfindung betrifft ein monophasiges Gel, das aus einer unpolaren Flüssigkeit im Gemisch mit nicht-ionischen Tensiden ausgewählt aus Estertensiden der Formel ROC(O)R1 oder RC(O)OR2 oder Ethertensiden der Formel ROR2 gebildet wird, wobei RO den Rest eines Zuckers oder Zuckeralkohols, RC(O)O eine Zuckersäure, C(O)R1 den Rest einer Fettsäure und R2 den Rest eines Fettsäurealkohols bezeichnet. In den angegebenen nichtionischen Tensiden ist der Zucker ein C5 oder C6 Zucker, und die Zuckersäure und der Zuckeralkohol eine davon abgeleitete Zuckersäure bzw. ein davon abgeleiteter Zuckeralkohol. Die Fettsäure oder der Fettsäurealkohol weist eine C- Kettenlänge von mindestens 6 auf und das nicht-ionische Tensid hat ein OHGruppen zu C-Atomverhältnis im Bereich von 1:3 bis 1:8. Die vorliegende Erfindung betrifft weiterhin Verfahren zur Herstellung entsprechender monophasiger Gele und die Verwendung entsprechender Gele zur Texturierung von Lebensmittel- oder Kosmetikprodukten oder zur Formulierung von Pharmazeutika, sowie in Farben und Lacken.
Stand der Technik
Das heute wachsende Bewusstsein für Belange der menschlichen Gesundheit hat zu einem erhöhten Interesse an der Reduzierung von gesättigten Fettsäuren und der Eliminierung von Transfettsäuren in Lebensmitteln im flüssigen Zustand geführt. Dabei bilden Organogele aus pflanzlichen Ölen, die mit vergleichsweise geringen Gehalten von Transfettsäuren und gesättigten Fettsäuren gebildet werden, eine Alternative zu konventionellen Festseifen-basierten Lebensmittelprodukten.
Um Pflanzenöle zu gelieren müssen diesen sogenannte Gelbildner zugesetzt werden. Durch die Gelierung wird die Freisetzung von Ölen aus dem System weitgehend verhindert, und die mechanischen und physikalischen Eigenschaften sowie die organoleptischen Eigenschaften, beispielsweise Konsistenz, Textur, Geschmack und Stabilität, werden verbessert. Dabei haben in letzter Zeit insbesondere Gelbildner mit niedrigem Molekulargewicht ein gesteigertes Interesse als Ersatz für kristalline Triglyceride in Speiseölen erfahren.
Wichtige in diesem Zusammenhang zu nennende Gelbildner für Öle sind beispielsweise Sterol, Monoglyceride, Fettsäuren, natürliche Wachse und Zuckeralkohole. Den meisten dieser Organogelatoren ist gemein, dass sie einen unpolaren Fettsäurerest und eine hydrophile alkoholische Gruppe enthalten. Die derzeit gebräuchlichsten Gelbildner verwenden hypercholesterinämische Fettsäuren wie Stearinsäure als Strukturierungsmittel.
Pang et al. beschreibt in Eur. J. Lipid Sei. Technol. 2020, 12, S. 1900412 einen Erythritol-basierten Zuckeralkoholdiester, insbesondere in Form von Erythritol- Dioctanoat, bei dem die beiden primären OH-Gruppen des Erythritols mit Octansäuregruppen verestert sind. Dabei verbleiben in der Mitte des Moleküls zwei polare OH-Gruppen. Diese Verbindung wurde zur Gelierung von Pflanzenölen eingesetzt.
Zhu et al beschriebt in Chem. Mater. 2006, 18, S. 5988-95 Trehalosediester mit Essigsäure, Butyrsäure, Decansäure und Myristinsäure, bei denen die Säuregruppen ebenfalls an die primären OH-Gruppen des Zuckers gebunden sind, und die zur Gelierung von organischen Lösungsmitteln genutzt werden können.
Bei den in Zhu gelierten Lösungsmittel handelt es sich um Ester (wie Ethyl- oder Butylacetate), Ketone und vergleichsweise polare Lösungsmittel wie Alkohole und Acetonitril.
Die US 10,081,748 Bl befasst sich mit Gelbildnern für Öle wie insbesondere Mineralöl, wobei die Gelbildner zu Wasser/Ölmischungen zugebbar sein sollen, und in diesem Gemisch selektiv ein Ölgel generieren sollen. Die in der US 10,081,748 Bl angegebenen Gelbildner sind Mono- oder Diester von C6- Zuckeralkoholen und mittelkettigen Fettsäuren wie Octansäure, die mit Hilfe eines Enzyms „Novozyme 435" zu den entsprechenden Estern umgesetzt werden, und
bei denen das Gel durch Zusammenlagerung der hydrophilen Bestandteile der Moleküle einerseits und der unpolaren Bestandteile der Moleküle andererseits gebildet wird.
Die in der US 10,081,748 Bl angegebenen Verbindungen erlauben eine Gelbildung mit Erdöl und mit pflanzlichen Ölen. Allerdings sind die Verbindungen nicht für die Bildung von Gelen mit hohen Festigkeitseigenschaften optimiert, wie sie für einige Anwendungen im Lebensmittel- und Kosmetikbereich angestrebt werden. Es besteht daher ein Bedarf an Mitteln zur Herstellung von gelbasierten Formulierungen von Pflanzenölen oder unpolaren organischen Lösungsmittel, die auch bei geringerem Zusatzanteil Gele mit hohen Festigkeiten bilden.
Murdan S. et al, J. Pharmaceutiac Science, Vol 88, No. 6, 1999, S. 608 bis 614 beschreibt Organogele auf der Basis von Sorbitanmonostearat, Sorbitanmonopalmitat. Für Sorbitantristearat wird angegeben, dass keine stabilen Gele erhalten werden konnten.
Shchipuov Y.A. et al, J. Colloid and Interface Science 211, 1999, S. 81-88 beschreibt Organogele mit n-Decan, die auf Lecitin als wesentlicher gelbildender Komponente basieren. Zusätzlich zu Lecitin wurden n-Dodecyl-ß-D-lactobionamid und n-Dodecyl-ß-D-glucopyranoside in Mengen von bis zu 10 Gew.-% (bezogen auf die Gesamtmenge an Gelbildner) eingesetzt, um die Wirkung der Zusätze auf die Eigenschaften des Gels zu untersuchen.
Die vorliegende Erfindung befasst sich mit diesem Bedarf.
Beschreibung der Erfindung
In den dieser Erfindung zugrundeliegenden Untersuchungen wurde überraschend gefunden, dass einerseits der Kettenlänge eines unpolaren Anteils eines gelbildenden Additivs und andererseits der Größe des polaren Anteils eine relevante Bedeutung für die mit diesem Molekül zu realisierenden Geleigenschaften zukommt. Es wurde insbesondere beobachtet, dass ein kleinerer polarer Anteil für die Herstellung von festeren Gelen (bei identischer Menge an zugesetztem Additiv) günstig ist, und dass sich besonders geeignete Gelierungseigenschaften durch die Abstimmung eines unpolaren Restes auf die
Größe des polaren Restes erzielen lassen. Im Rahmen der Erfindung wurde die „Größe des polaren Restes" über die Anzahl der OH-Gruppen in dem Rest bestimmt, während die Größe des unpolaren Restes mittelbar über die Anzahl der Kohlenstoffatome in der Verbindung abgeschätzt wurde. Weiterhin wurde gefunden, dass die mit den nicht-ionischen Tensiden hergestellten Gele zumindest teilweise thixotrophe Eigenschaften aufweisen.
Demzufolge betrifft die vorliegende Erfindung in einem ersten Aspekt ein monophasiges Gel, das eine unpolare Flüssigkeit und ein nicht-ionisches Tensid ausgewählt aus Estertensiden der Formel ROC(O)R1 oder RC(O)OR2 oder Ethertensiden der Formel ROR2 umfasst, wobei RO des Rest eines Zuckers oder Zuckeralkohols, RC(O)O eine Zuckersäure, OC(O)R1 eine Fettsäure und R2 einen Fettsäurealkohol bezeichnet, wobei der Zucker ein C5 oder C6 Zucker ist, die Zuckersäure und der Zuckeralkohol eine davon abgeleitete Zuckersäure bzw. ein davon abgeleiteter Zuckeralkohol ist, und die Fettsäure oder der Fettsäurealkohol eine C-Kettenlänge von mindestens 6 aufweist und wobei das nicht-ionische Tensid ein OH-Gruppen zu C-Atomverhältnis im Bereich von 1:3 bis 1:8 aufweist.
Die Angabe „unpolare Flüssigkeit" bezeichnet in der vorliegenden Erfindung aprotische chemische Verbindungen, die bei Raumtemperatur in flüssiger Form vorliegen. Bevorzugt weist die unpolare Flüssigkeit eine Polarität, bestimmt als ET(30) als die Übergangsenergie der längstwelligen Vis/NIR-Absorptionsbande in einer Lösung mit dem negativ solvatochromen Reichardt-Farbstoff (Betain 30) bei Normalbedingungen in kcal/mol definiert und Substanzen von 145 kJ/mol oder weniger und bevorzugt im Bereich von 140 bis 120 kJ/mol auf. Geeignete unpolare Lösungsmittel sind damit insbesondere lineare oder verzweigte Alkane wie n-Hexan oder n-Heptan, aber auch Öle wie insbesondere Pflanzenöle oder Alkanone.
Die Angabe "monophasiges Gel" bezeichnet in der vorliegenden Erfindung den Umstand, dass die unpolare Flüssigkeit und das nicht-ionische Tensid eine Phase bilden. Dies schließt nicht aus, dass das Gel weitere z.B. feste Bestandteile, wie Farbmittel oder -pigmente enthält, die als weitere Phase in dem Gel vorliegen, da sich die festen Bestandteile in dem Gel nicht lösen. Auch solche Mischungen sollen im Kontext der hier angegebenen Erfindung als Monophasige Gele gelten.
Das angegebene monophasige Gel enthält jedoch neben der aus der unpolaren Flüssigkeit gebildeteren Phase keine separate flüssige Phase.
Der Rest „OR" bezeichnet in der oben angegebenen Formel den Rest eines Zuckers oder Zuckeralkohols, wobei der Zucker durch Addition eines Wasserstoffatoms aus dem Rest zu „ROH" gebildet wird. Der Rest „R" bildet dabei den restlichen Teil des Zuckers oder Zuckeralkohols, in dem in einem C5 Zucker 5 Kohlenstoffatome, 3 OH-Gruppen und eine Aldehyd- oder Ketofunktion, und in einem C6 Zucker 6 Kohlenstoffatome, 4 OH-Gruppen und eine Aldehyd- oder Ketofunktion enthalten sind. In einem Zuckeralkohol ist die Aldehyd- oder Ketofunktion zu einer weiteren OH-Gruppe reduziert. Es ist auch möglich, dass eine oder mehrere der OH-Gruppen unter Ausbildung einer CH2-Gruppe desoxidiert sind, solange insgesamt aus dem Zucker oder Zuckeralkohol ein nichtionisches Tensid gebildet ist, das ein OH-Gruppen zu C-Atomverhältnis im Bereich von 1:3 bis 1:8 aufweist. Gemäß der vorstehenden Definition werden Zuckeranhydride (d.h. von Zucker durch Eliminierung von Wasser abgeleitete Substanzen, wie beispielsweise Sorbitanhydrid) nicht als Zucker oder Zuckeralkohole angesehen, wie sie im Rest OR vorliegen, so dass auf solchen Substanzen beruhende Ester- und Ethertenside nicht von der vorliegenden Erfindung umfasst sind.
Bei der Zuckersäure, deren Rest „RC(O)O" bildet, handelt es sich um ein Zuckerderivat, bei dem eine primäre OH-Gruppe des Zuckers oder die Aldehydgruppe zu einer Carbonsäuregruppe oxidiert ist.
Eine Fettsäure bezeichnet im Kontext der hier angegebenen Erfindung eine in der Regel lineare Alkancarbonsäure, wobei erfindungsgemäß auch solche Carbonsäuren von der Bezeichnung umfasst sein sollen, die an der Alkan säure kette eine oder mehrere OH-Gruppen (bevorzugt eine) und/oder einen oder mehrere (bevorzugt maximal zwei) kurze Alkylreste (C1-C3), insbesondere in Form von Methyl oder Ethyl aufweisen. Weiterhin umfasst die Angabe „Fettsäure" ungesättigte Fettsäuren, die in ihrer Kette eine oder mehrere Doppelbindungen aufweisen.
Eine Fettsäurealkohol ist ein Derivat einer Fettsäure, wie vorstehend angegeben, bei dem die Carbonsäurefunktion (-CO2H) durch Reduktion in eine Alkoholfunktion (-CH2OH) umgewandelt wurde.
In den nicht-ionischen Tensiden, die im Kontext der hier angegebenen Erfindung eingesetzt werden, sind die polaren Molekülteile (Zucker/Zuckeralkohol/Zuckersäure) und die unpolaren Molekülteile (Fettsäure oder Fettsäurealkohol) über eine Ester- (-C(O)O-C) oder Etherbindung (-COC-) kovalent miteinander verknüpft.
Beispielhaft als Zucker, die in den nicht-ionischen Tensiden der vorliegenden Erfindung verwendet werden können, sind beispielsweise die C5-Zucker Arabinose, Xylose oder Ribose und die C6-Zucker Glucose, Mannose oder Galactose, sowie Fructose und Sorbose. Beispielhafte Zuckeralkohole, die erwähnt werden können sind Arabitol, Xylitol, Ribitol, Mannitol, Sorbitol, Dulcitol oder Iditol. Beispielhafte Zuckersäuren, die in den nicht-ionischen Tensiden verwendet werden können, sind Glucuronsäure, Galacturonsäure, Xuluronsäure und Gluconsäure, Galactonsäure oder Xylonsäure. Diese Aufzählung ist aber nicht abschließend, und weitere Zucker, Zuckeralkohole oder Zuckersäuren, die in den erfindungsgemäßen nicht-ionischen Tensiden verwendet werden können, sind nachstehend erwähnt.
Die Fettsäuren, die in die nicht-ionischen Tenside gemäß der vorliegenden Erfindung einbezogen sind, sind bevorzugt Fettsäuren, die an der Carbonsäurefunktion mit einer Alkylgruppe substituiert sind, die ausgewählt ist aus der Gruppe umfassend n-Pentyl, n-Hexyl, n-Heptyl, n-Octyl (Alkylrest der Caprylsäure), n-Nonyl (Alkylrest der Pelargonsäure), n-Decyl (Alkylrest der Caprinsäure), n-Lauryl, iso-Pentyl, iso-Hexyl, iso-Heptyl, iso-Octyl, iso-Nonyl, iso- Decyl, iso-Lauryl, 2,2-Dimethylpropyl, 4-Methyl-2-pentyl, 2,3-Dimethylpentyl, 3- Ethyl-2-pentyl und 3-Ethyl-5-methyloctyl. Andere Beispiele von gesättigten Gruppen umfassen n-Undecanyl, n-Dodecanyl, n-Tridecanyl (Alkanrest der Myristinsäure), n-Tetradecanyl, n-Pentadecanyl (Alkanrest der Palmitinsäure), n- Hexadecanyl (Alkanrest der Margarinsäure), n-Heptadecanyl (Alkanrest der Stearinsäure), n-Octadecanyl, n-Nonadecanyl (Alkanrest der Aracinsäure), n- Icosanyl, 4-Methyldodecanyl, und 3-Ethyl-5-methylpentadecanyl.
Ungesättigte Fettsäuren, die in den nicht-ionischen Tensiden verwendet werden können, umfassen Fettsäuren, die an der Carbonsäurefunktion mit einer Alkylengruppe substituiert sind, die ausgewählt ist aus der Gruppe umfassend n- Pentenyl, n-Hex-2-enyl, n-Hept-3-enyl, n-Oct-4-enyl, n-Non-5-enyl, n-Dec-6-enyl, n-Dodec-3,6,-dienyl, n-Heptadec-9-enyl (Alkenrest der Ölsäure), iso-Pentenyl, iso-Hexenyl, iso-Heptenyl, iso-Octenyl, iso-Nonenyl, iso-Decenyl, iso-Dodecenyl, 3,3,3-Trimethylpropenyl, 4-Methyl-2-pentenyl, 2,3-Dimethylpent-2-enyl, 3-Ethyl- 2-pentenyl, 2-Isopropyl-2,2-dimethylpentynyl, und 3-Ethyl-5-methyloct-2,4-dienyl. Andere Beispiele von ungesättigten Alkylgruppen beinhalten n-Heptadec-3,6,- dienyl, 3-Isopropyl-2,4-dimethylpentynyl, und 3,3,3-Trimethylheptadecynyl.
Weiterhin in den nicht-ionischen Tensiden verwendbar sind Fettsäuren, die an der Carbonsäurefunktion mit einer Hydroxy-Alkylgruppe substituiert sind, wobei die Hydroxy-Alkylgruppe bevorzugt ausgewählt ist aus der Gruppe umfassend Hydroxy-Pentyl, Hydroxy-Hexyl, Hydroxy-Heptyl, Hydroxy-Octyl, Hydroxy-Nonyl, Hydroxy-Decyl, Hydroxy- Lauryl, Hydroxy-Undecanyl, Hydroxy-Dodecanyl, Hydroxy-Tridecanyl, Hydroxy-Tetradecanyl, Hydroxy-Pentadecanyl, Hydroxy- Hexadecanyl, Hydroxy-Heptadecanyl, Hydroxy-Octadecanyl, Hydroxy- Nonadecanyl, und Hydroxy-Icosanyl. Für Hydroxycarbonsäuren ist es von Vorteil, wenn die Hydroxygruppe am a- oder ß-C-Atom zur Carbonsäure positioniert ist, um sicherzustellen, dass sich ein ausreichend langer „unpolarer" Rest für Wechselwirkungen mit der unpolaren Flüssigkeit ergibt.
Der Ausdruck „monophasiges Gel" bezeichnet im Kontext der hier angegebenen Erfindung ein Gel mit nur einer Phase, die meist durch ein Netzwerk der nichtionischen Tenside, in dessen Freiräume die unpolare Flüssigkeit eingelagert ist, gebildet wird. Insbesondere wird das Netzwerk der nicht-ionischen Tenside durch die nicht ionischen Tenside gebildet, und Netzwerke, in denen die nicht-ionischen Tenside nur als Ergänzung zu anderen gelbildenden Mitteln (beispielsweise in Form von Lecitin) vorhanden sind, werden von der Erfindung nicht erfasst.
Der Ausdruck „thixotrope Mischung" bezeichnet im hier angegebenen Kontext eine Mischung, die direkt nach Scherung eine geringere Viskosität aufweist als vor der Scherung, und wobei die Viskosität nach Ende der Einwirkung der Scherung auf die Viskosität vor der Scherung (oder zumindest auf einen Wert nahe dieser Viskosität ansteigt. Dies wird auch als Strukturerholung in der
Ruhephase bezeichnet (d.h. die Fließeigenschaften der Mischung sind zeitabhängig, wobei die Viskosität infolge andauernder äußerer Einflüsse abnimmt und erst nach beendigter Beanspruchung wieder in die Ausgangsviskosität zurückkehrt).
In einer bevorzugten Ausführungsform enthält das angegebene monophasige Gel als nicht-ionisches Tensid ein nicht-ionisches Estertensid der Formel ROC(O)R1, wobei R1 den Rest einer unverzweigten oder verzweigten gesättigten oder ungesättigten Fettsäure mit einer C-Kettenlänge im Bereich von 8 bis 20 bezeichnet. Bevorzugt ist die unverzweigte oder verzweigte gesättigte oder ungesättigte Fettsäure ausgewählt aus Caprylsäure, Pelargonsäure, Caprinsäure, Laurinsäure, Myristinsäure, Palmitinsäure, Margarinsäure, Stearinsäure, Arachinsäure, Caproleinsäure, Undecylensäure, Myristoleinsäure, Palmitoleinsäure und Ölsäure.
„RO" kann in diesem Fall ein C5 oder C6 Zucker oder ein davon abgeleiteter Zuckeralkohol sein, wobei das Tensid der Formel ROC(O)R1 über eine konventionelle Veresterung der beiden Bestandteile gebildet sein kann. Da ein Zucker in dem nicht-ionischen Tensid eine OH-Gruppe weniger aufweist als ein entsprechender Zuckeralkohol, ist es hierzu bevorzugt, wenn sich die C- Kettenlänge des Fettsäurerests in diesem Fall eher im unteren Teil des angegebenen Bereichs bewegt, z.B. im Bereich von 8 bis 14 und bevorzugt 8 bis 12 oder 6 bis 12, während die C-Kettenlänge des Fettsäurerests bei einem entsprechenden Zuckeralkohol etwas größer ist, und sich z.B. im Bereich von 10 bis 18 oder 10 bis 16 bewegt.
In einer anderen bevorzugten Ausführungsform enthält das angegebene monophasige Gel als nicht-ionisches Tensid ein nicht-ionisches Estertensid der Formel ROC(O)R1, wobei R1 den Rest einer verzweigten Fettsäure mit ein oder mehreren Methylseitenketten oder eine ß-Hydroxyfettsäure bezeichnet.
In einer noch anderen bevorzugten Ausführungsform enthält das angegebene monophasige Gel als nicht-ionisches Tensid ein nicht-ionisches Ethertensid der Formel ROR2, wobei R2 den Rest unverzweigten oder verzweigten gesättigten oder ungesättigten Fettsäurealkohols mit einer C-Kettenlänge im Bereich von 10 bis 20, bevorzugt durch Reduktion erhältlich aus Caprinsäure, Laurinsäure,
Myristinsäure, Palmitinsäure, Margarinsäure, Stearinsäure, Arachinsäure, Caproleinsäure, Undecylensäure, Myristoleinsäure, Palmitoleinsäure, Ölsäure, oder Hydroxydecansäure, bezeichnet. Für die C-Kettenlänge des Rests R2 gelten die vorstehend für die C-Kettenlänge des Fettsäurerests gemachten Angaben analog als bevorzugt.
„RO" kann in diesem Fall ein C5 oder C6 Zucker oder ein davon abgeleiteter Zuckeralkohol sein, wobei das Tensid der Formel ROR2 über eine konventionelle Etherbindung der beiden Bestandteile gebildet sein kann. Um eine solche zu erleichtern kann die OH-Gruppe im Fettsäurealkohol zunächst in eine Abgangsgruppe modifiziert werden, wie eine Toluolsulfonatgruppe oder ein Halogen wie Br oder I, und der entsprechend modifizierte Fettsäurealkohol kann in der Folge unter basischen Bedingungen mit dem Zucker oder Zuckeralkohol umgesetzt werden. Wenn es sich bei „RO" um einen Zucker handelt, kann es sich bei dem nicht-ionischen Ethertensid auch um ein „Alkylglykosid" handeln, bei dem der Fettsäurealkohol über eine glykosidische Bindung an den Zucker gebunden ist. Die so gebildete Bindung weist in a-Stellung zur C-O-R2 Bindung ein weiteres Sauerstoffatom auf.
Darüber hinaus kann, wenn es sich bei „RO" um einen Zucker handelt, der Rest R2 ein Fettsäurealkohol sein, der zusätzlich zu der Alkoholfunktion eine Säuregruppe aufweist. Solche Reste leiten sich bevorzugt von a- oder ß- Hydroxycarbonsäuren ab, eine in diesem Zusammenhang besonders bevorzugte Hydroxycarbonsäure ist z.B. ß-Hydroxydecansäure. In entsprechenden Alkylglykosiden ist der Zucker über eine glykosidische Bindung mit den Alkoholrest der Hydroxycarbonsäure verbunden; in diesem Fall bildet die Alkylgruppe der Hydroxycarbonsäure, die der Carbonsäurefunktion entgegengesetzt ist, einen unpolaren Molekülteil, während die Carbonsäurefunktion dem polaren Molekülteil zugerechnet wird.
In einer noch anderen bevorzugten Ausführungsform enthält das angegebene monophasige Gel ein nicht-ionisches Tensid der Formel RC(O)OR2, wobei R2 den Rest eines unverzweigten oder verzweigten gesättigten oder ungesättigten Fettsäurealkohols mit einer C-Kettenlänge im Bereich von 10 bis 20 bezeichnet, der bevorzugt durch Reduktion erhältlich ist aus Caprinsäure, Laurinsäure, Myristinsäure, Palmitinsäure, Margarinsäure, Stearinsäure, Arachinsäure,
Caproleinsäure, Undecylensäure, Myristoleinsäure, Palmitoleinsäure, Ölsäure, oder Hydroxydecansäure.
Der Rest RC(O) bezeichnet in diesem Fall den Rest einer Zuckersäure, die durch Veresterung mit dem unverzweigten oder verzweigten gesättigten oder ungesättigten Fettsäurealkohol verknüpft wird. Zuckersäuren, die im Kontext der hier angegeben Erfindung verwendet werden können, umfassen beispielsweise Glucuronsäure, Galacturonsäure, Xuluronsäure, Gluconsäure, Galactonsäure, Mannozuckersäure oder Xylonsäure, bevorzugt in der jeweiligen D-Form, und bevorzugt D-Gluconsäure, D-Glucoronsäure und D-Mannozuckersäure.
Generell ist es für die angegebenen nicht-ionischen Tenside bevorzugt, wenn der enthaltene C5 oder C6 Zucker, die Zuckersäure und der Zuckeralkohol ausgewählt ist aus der Gruppe umfassend Xylose, Arabinose, Glucose, Galactose, Mannose, Sorbose, Fructose, Glucuronsäure, Xylitol, Mannitol und Sorbitol. Die angegebenen Zucker, Zuckeralkohole und Zuckersäuren zeichnen, sich durch eine hohe natürliche Verfügbarkeit und entsprechend niedrige Kosten aus.
In einer besonders bevorzugten Ausführungsform ist das nicht-ionische Tensid entweder ein nicht-ionisches Estertensid der Formel ROR2 oder RC(O)OR2. In einer anderen besonders bevorzugten Ausführungsform ist das nicht-ionische Tensid ein nicht-ionisches Estertensid der Formel ROCCOjR1 oder RC(O)OR2 oder ein nicht-ionisches Ethertensid der Formel ROR2, wobei RO den Rest eines C5- Zuckers oder C5-Zuckeralkohols oder einer C5-Zuckersäure bezeichnet.
Vorstehend wurde bereits darauf hingewiesen, dass die in den erfindungsgemäßen Gelen verwendeten nicht-ionischen Tenside so ausgebildet sein sollen, dass sich ein OH-Gruppen zu C-Atomverhältnis im Bereich von 1:3 bis 1:8 einstellt. Die „Anzahl der OH-Gruppen" bezeichnet dabei die Anzahl der freien OH-Gruppen in dem nicht-ionischen Tensid, d.h. wenn z.B. das nicht-ionische Tensid aus Xylit (5-OH Gruppen) und Laurinsäure gebildet ist, ist eine der OHGruppen des Xylits als Ester gebunden, so dass das resultierende nicht-ionische Tensid nur 4 OH-Gruppen aufweist. Ein entsprechendes auf Xylose beruhenden nicht-ionisches Tensid weist 3 freie OH-Gruppen, weil Xylose im Gegensatz zu Xylit in freier Form nur 4 OH-Gruppen (und eine Aldehydgruppe) enthält. Etwaige im Tensid vorhandene CO2H werden als OH Gruppen angesehen. Die Anzahl der
C-Atome bestimmt sich als Summe der C-Atome in dem Zucker, dem Zuckeralkohol oder der Zuckersäure und der Anzahl der C-Atome in Rest R1 oder R2. Als besonders bevorzugtes Verhältnis kann ein Bereich von 1:3.2 bis 1:7, weiter bevorzugt 1:3.5 bis 1:6 und noch weiter bevorzugt 1:3,7 bis 1:5 angegeben werden.
In den dieser Erfindung zugrunde liegenden Untersuchungen wurde gefunden, dass zumindest einige erfindungsgemäße Gele thixotrophe Eigenschaften aufweisen. In einer bevorzugten Ausführungsform handelt es sich daher bei dem erfindungsgemäßen Gel um ein Gel mit thixotropen Eigenschaften, bevorzugt mit einer Strukturerholung nach 10s (Viskosität 10s nach Beendigung einer Scherbelastung, die um den Betrag von x% der Differenz zwischen der Viskosität vor der Scherbelastung und der Viskosität bei der Scherbelastung höher liegt als die Viskosität bei der Scherbelastung) von mindestens 10%, und bevorzugt mindestens 20% auf. In einer anderen Ausführungsform weist das thixotrope Gel eine Strukturerholung nach 60s von mindestens 20%, bevorzugt mindestens 30% und noch weiter bevorzugt mindestens 50% auf.
Ein weiterer wichtiger Parameter des nicht-ionischen Tensids, der die Eigenschaften des monophasigen Gels oder der thixotropen Mischung beeinflusst, ist der HLB-Wert des nicht-ionischen Tensids. Bevorzugt in den angegebenen Gelen und thixotropen Mischungen einzusetzende nicht-ionische Tenside weisen einen HLB-Wert im Bereich von etwa 6 bis 14 und weiter bevorzugt etwa 7 bis 12 auf. HLB-Werte für die nicht-ionischen Tenside werden nach Griffin mit folgender Formel berechnet:

M wobei M ist das Molekulargewicht des nicht-ionischen Tensides und ML ist das Molekulargewicht des lipophilen Molekülanteils bezeichnet. Für ROC(O)R1 ist der lipophile Molekülanteil die Alkylkette des Fettsäurerestes R1 ab dem C-Atom, ab dem die Fettsäure keine OH-Gruppen enthält (d.h. ab dem ersten C-Atom nach der Säurefunktion in nicht-hydroxylierten Fettsäuren und ab dem ersten C-Atom nach der CHOH-Gruppe in hydroxyl ierten Fettsäuren). Für Fettsäurealkohole in RC(O)OR2 und ROR2 ist der lipophile Molekülanteil die Alkylkette ab CI des
Fettsäurealkoholrests „R2", bzw. wenn der Fettsäurealkohol weitere OH-Gruppen enthält, ab dem ersten C-Atom nach der CHOH-Gruppe.
Hinsichtlich der Menge des nicht-ionischen Tensids, dass zur Bildung des Gels in die unpolare Flüssigkeit einzubeziehen ist, unterliegt die vorliegende Erfindung keinen relevanten Beschränkungen, wobei aber in der Regel nicht zuletzt aus ökonomischen Erwägungen die Flüssigkeit in einem relevanten Überschuss zu dem nicht-ionischen Tensid vorliegt. In dem meisten Fällen macht das nichtionische Tensid nicht mehr als 10 Gew. -% bezogen auf die Gesamtmenge an nicht-ionischem Tensid und unpolarer Flüssigkeit an dem monophasigen Gel aus. Weiter bevorzugt ist es, wenn das nicht-ionische Tensid einen Anteil von 0,05 bis 7 Gew.-%, bevorzugt 0,1 bis 6 Gew.-%, weiter bevorzugt 0,25 bis 5 Gew.-% und noch weiter bevorzugt 0,5 bis 3 Gew.-% an dem monophasigen Gel oder der thixotropen Mischung ausmacht.
Die unpolare Flüssigkeit liegt in dem erfindungsgemäßen monophasigen Gel bevorzugt als Speiseöl, Pflanzenöl, Fischöl, Insektenfett, Talg, Kerosin, Isopropylpalmitat, Isopropylmyristat, Pentan, Hexan, Heptan, Getan, iso-Octan, Decan, Dibutylether, Ethylacetat, Cyclohexan, Cylcopentan, Cyclooctan, Isopropanol, Terpene, Glykolether, Ethyllaurat, Ethylmyristat, Ethylpalmitat, vor. In einer Ausführungsform kann die unpolare Flüssigkeit auch in Form von Dimethylsulfoxid vorliegen. In einer ganz besonders bevorzugten Ausführungsform handelt es ich bei der unpolaren Flüssigkeit in dem monophasigen Gel um ein nachwachsendes Öl oder Fett, wie Speiseöl, Pflanzenöl, Fischöl oder ein Insektenfett, sowie mikrobielle Öle.
Unpolare Flüssigkeiten in Form von Alkanen, wie Pentan, Hexan, Heptan, Getan, iso-Octan, Decan, oder auch Terpenen oder Glycolethern sind insbesondere im Kontext von Farben und Lacke relevant, während Öle oder Ester von Ölsäuren mit C2- bis C6- und insbesondere C2- bis C4-Alkoholen auch in Bereichen Anwendungen finden, bei denen ein Kontakt mit der Oberfläche des menschlichen Körpers vorgesehen ist, beispielsweise bei Kosmetikprodukten oder im Lebensmittelbereich.
Die unpolare Flüssigkeit macht in den erfindungsgemäßen monophasigen Gelen den größten Anteil der Zusammensetzung aus, meist mehr als 80 Gew. -% der
Zusammensetzung. In einer Ausführungsform mach die unpolare Flüssigkeit einen Anteil im Bereich von 80 bis 99,9 Gew. -% aus, in einer bevorzugten Ausführungsform 90 bis 99,75 Gew.-% und noch weiter bevorzugt 95 bis 99,5 Gew.-%.
Neben der unpolaren Flüssigkeit und dem nicht-ionischen Tensid kann das monophasige Gel weitere Bestandteile enthalten, die abhängig vom gewünschten Verwendungszweck des Gels einbezogen werden können. Substanzen, die verwendet werden können, beinhalten, sind aber nicht beschränkt auf Konservierungsstoffe, dermatologische Wirkstoffe, Antioxidantien, Pigmente oder andere Farbmittel etc.
Weitere vorteilhafte Wirkstoffe, insbesondere für kosmetische Anwendungen sind natürliche Wirkstoffe und/oder deren Derivate, wie z. B. alpha -Liponsäure, Phytoen, D-Biotin, Coenzym Q10, alpha-Glucosylrutin, Camitin, Carnosin, natürliche und/oder synthetische Isoflavonoide, Kreatin, Taurin und/oder ß- Alanin.
In die erfindungsgemäßen unpolaren Gele können aber auch andere pharmazeutisch oder dermatologisch wirkende Substanzen wie beispielsweise die Haut beruhigende und pflegende Substanzen eingearbeitet sein. Hierzu zählen beispielsweise Panthenol, Allantoin, Tannin, Antihistaminika, Antiphlogistika, Glucocorticoide (z.B. Hydrocortison) sowie Pflanzenwirkstoffe wie Azulen und Bisabolol, Glycyrrhizin, Hamamelis und Pflanzenextrakte wie Kamille, Aloe vera, Hamamelis, Süßholzwurzel.
Die Menge der vorgenannten Wirkstoffe, Antioxidantien etc. (eine oder mehrere Verbindungen) in den unpolaren Gelen beträgt vorzugsweise 0,001 bis 10 Gew.- %, besonders bevorzugt 0,05 - 8 Gew.-%, insbesondere 1 - 5 Gew.-%, bezogen auf das Gesamtgewicht des monophasigen Gels.
Die rheologischen Eigenschaften des erfindungsgemäßen monophasigen Gels, sind bevorzugt in der Weise abzustimmen, dass das Gel eine Fließgrenze nach 24h mit einer Schubspannung im Bereich von mehr als 0,1 Pa, bevorzugt im Bereich von 0,1 bis 20 Pa aufweist. Alternativ oder zusätzlich dazu ist es bevorzugt, wenn das Gel ein Speichermodul (bestimmt an der Fließgrenze und im
linear viskoelastischen Bereich) von mindestens 5 Pa, und bevorzugt im Bereich von 8 Pa bis 500 Pa aufweist. Die fraglichen Schub- und Speichermodule werden im Kontext der hier angegebenen Erfindung mittels eines Scherrheometers (MCR 702e MultiDrive Rheometer von Anton Paar) bestimmt, wie im Beispielteil angegeben.
Die rheologischen Eigenschaften der erfindungsgemäßen thixotropen Mischung sind vorzugsweise in der Weise abzustimmen, dass sich eine Strukturerholung bestimmt wie im Beispielteil beschrieben von mindestens 55%, bevorzugt mindestens 60% und weiter bevorzugt mindestens 70% ergibt. Thixotrope Eigenschaften werden im Kontext der hier angegebenen Erfindung mittels eines Scherrheometers (MCR 702e MultiDrive Rheometer von Anton Paar) bestimmt, wie im Beispielteil angegeben.
In einem weiteren Aspekt betrifft die vorliegende Erfindung ein Verfahren zur Herstellung eines monophasigen Gels, wie es im vorstehenden angegeben wurde, wobei das Verfahren die Schritte i) Bereitstellen einer Mischung aus unpolarer Flüssigkeit und mindestens einem nicht-ionischen Ester- oder Ethertensid, wie im vorstehenden angegeben; ii) Erwärmen der Mischung, bevorzugt auf eine Temperatur im Bereich von 30°C und 120°C, weiter bevorzugt 40 bis 100°C, für einen Zeitraum, bis sich ein homogenes Gemisch ausgebildet hat; iii) ruhen lassen der Mischung unter Ausbildung eines monophasigen Gels, umfasst.
Im Rahmen des Verfahrens wird die Mischung in Schritt ii) vorzugsweise für einen Zeitraum von 5 Min bis 2h und bevorzugt 10 Min bis 60 Min erwärmt. Hierzu kann es zweckmäßig sein, wenn die Ausbildung des homogenen Gemischs in Schritt ii) durch eine mechanische Behandlung ausgewählt aus der Gruppe umfassend Schütteln, Rühren, Vermahlung, insbesondere in einer Kugelmühle, Ultraschall und Vibration unterstützt wird.
Die Vorgabe „ruhen lassen" bezeichnet im Kontext des hier angegebenen Verfahrens ein „stehen lassen der Mischung ohne Rühr- oder andere Bewegung".
In einer Ausführungsform erfolgt das ruhen lassen bei Umgebungsbedingen (20 bis 25°C). In einer anderen Ausführungsform erfolgt das ruhen lassen bei verminderter Temperatur (z.B. 0 bis 8 °C und insbesondere 3 bis 6°C). Für eine solche Behandlung hat sich gezeigt, dass sich Gele mit im Vergleich zu einem ruhen lassen bei Umgebungsbedingen mit noch weiter verbesserten mechanischen Eigenschaften, bzw. thixotrope Mischungen mit einer höheren Strukturerholung herstellen lassen.
In einem noch weiteren Aspekt betrifft die vorliegende Erfindung die Verwendung eines monophasigen Gels, wie im vorstehenden angegeben, zur Texturierung von Lebensmittelprodukten, Texturierung von Kosmetikprodukten, Formulierungen für Pharmazeutika, Membranen, Phasentransfermaterialien, Verdunstungsbarrieren, Farben und Lacke, 3D-Druck, oder Anti-Fouling-Oberflächenbeschichtungen. Für eine Verdunstungsbarriere kann beispielsweise eine dünne Schicht eines erfindungsgemäßen Gels auf die Oberfläche eines wasserhaltigen Substrates oder einer wasserhaltigen Mischung aufgebracht werden, um auf diese Weise Verdunstungsverluste von Wasser zu minimieren.
Für Farben und Lacke ist insbesondere ein thixotrophes Viskositätsverhalten wünschenswert. Lacke auf Basis von unpolaren Lösungsmittel n weisen beispielsweise dynamische Viskositäten von etwa 3000 mPas auf.
Kosmetikprodukte, in denen ein erfindungsgemäßes Gel verwendet werden kann, beinhalten beispielsweise After Sun Pflegegele, Babyöl-Gele, Körperlotionen, Gesichtspflegeprodukte, Gellotionen, Cremes, Lippenbalsame, Lip Gloss, Duschpflegegele, oder Bräunungsgele. Ein solches Kosmetikprodukt weist vorzugsweise eine Fließgrenze im Bereich von 0,5 bis etwa 50 Pa und vorzugsweise 0,5 bis 30 Pa auf.
Bei der Texturierung von Lebensmittelprodukten kann das Lebensmittelprodukt in einer Ausführungsform als Fettersatzstoff ausgebildet werden, wobei dieser bevorzugt einen linear viskoelastischen Bereich von 100 bis 10.000 Pa aufweist.
In folgenden wird die vorliegende Erfindung anhand einiger Ausführungsbeispiele näher illustriert, die jedoch nicht in irgendeiner Weise als beschränkend für den
Schutzumfang der Ansprüche oder der dieser zugrundeliegenden Anmeldung aufgefasst werden sollten:

Allgemeine Vorschrift zur Herstellung von Estern als nicht-ionische Tenside
Die Ester (z.B. Sorbitolmonolaurat) wurden enzymatisch hergestellt. Dazu wurden in einem Rührkesselreaktor wurden äguimolare Anteile an Zucker/Zuckeralkohol und Fettsäure mit einer Lipase (z.B. Candida rugosa Lipase oder Candida antarctica Lipase B) bei 50°C über 24h in 2-Methyl-2-butanol gerührt. Anschließend wurde die Reaktionsmischung filtriert, das Lösungsmittel wurde eingedampft und das erhaltene Produkt wurde mittels Silicagel Chromatographie gereinigt.
2) Allgemeine Vorschrift zur Herstellung von Ethern als nicht-ionische Tenside
Die nachfolgend für Tests verwendeten Etherverbindungen wurden konventionell durch Umsetzung der Zuckeralkohole mit Abgangsgruppen modifizierten Fettsäurealkoholen (wobei als Abgangsgruppe beispielsweise Tosylat oder ein aus dem Alkohol erzeigtes Halogenid verwendet wird) erhalten. Die Aufarbeitung und Reinigung dieser Verbindung erfolgte analog der Beschreibung zur Herstellung der Ester-Tenside. Die Herstellung von Zuckerglykosiden aus den Zuckern und Zuckeralkoholen erfolgte enzymatisch durch Umsetzung des Zuckers mit einer ß- Glucosidase und dem Fettsäurealkohol in einem Tief-Eutektischem Lösungsmitte, wie in Delavault, A. https://onlinelibrary.wiley.com/doi/10.1002/cite.202100150 beschrieben. Die Aufarbeitung und Reinigung erfolgte analog der Beschreibung zur Herstellung der Ester-Tenside.
Die Tenside Octylxylosid, Decylxylosid, Laurylxylosid, Myristylxylosid und Carboxy-Decylxylosid wurden von Glycosurf (USA) bezogen.
3) Untersuchung der nicht-ionischen Tenside in Bezug auf Gelbildungsvermögen und Eigenschaften der hergestellten Gele
Die nicht-ionische Tenside wurden eingewogen und mit einer unpolaren Flüssigkeit versetzt, wobei verschiedene Konzentrationen an nicht-ionischem Tensid eingestellt wurden. Die so hergestellten Mischungen wurden auf eine Temperatur zwischen 30 - 120 °C erhitzt, um eine homogene Phase zu erhalten. Danach wurden die Mischungen für 1-24 h bei einer Temperatur von 20-25°C stehen gelassen, wobei sich ein Gel bildete.
Die so erhaltenen Proben wurden rheologischen Messungen unterzogen. Dazu wurden Schub- und Speichermodule mittels eines Scherrheometers (MCR 702e MultiDrive Rheometer von Anton Paar) bestimmt, wobei für die Messung bei einer konstanten Kreisfrequenz von co= 10 rad/s mit einer oszillierenden Scherdeformation mit logarithmischer Verteilung zwischen 0,05 % und 15 % Scherdeformation gemessen wurde. Für die Messungen wurde eine PP25 Messplatte mit einem Durchmesser von 25 mm verwendet, die auf 20 °C temperiert war.
Die thixotrophen Eigenschaften wurden ebenfalls mittels eines Scherrheometers (MCR 702e MultiDrive Rheometer von Anton Paar) bestimmt. Für die Messung wurde die Strukturerholung mit einem 3-Intervall-Tixotrophie-Test (3-ITT) bestimmt. Dazu wurde die Viskosität im ersten Schritt bei niedriger Scherung von 0,1 s-1 über 10 Messpunkte mit einer Messpunktdauer von 5 s bestimmt (Viskosität Schritt 1). Im zweiten Schritt wurde bei der Messung der Viskosität eine Scherung von 100 s-1 über 10 Messpunkte mit einer Messpunktdauer von 1 s verwendet (Viskosität Schritt 2). Nach diesem Intervall wurde 4 s bei 0 s-1 Scherung gemessen, um ein Interferenzsignal in Schritt 3 zu vermeiden. In Schritt 3 wurde die Viskosität bei niedriger Scherung von 0,1 s-1 über 1000 Messpunkte mit einer Messpunktdauer von 0,5 s bestimmt. Für die Messungen wurde eine PP25 Messplatte mit einem Durchmesser von 25mm verwendet, die auf 20 °C temperiert war.
Die Zusammensetzungen der untersuchten Mischungen der nicht-ionischen Tenside mit dem jeweiligen unpolaren Lösungsmittel (Pflanzenöl, Isopropylpalmitat oder n-Pentan) sind in den folgenden Tabellen angegeben. In diesen sind weiterhin die für die Fließgrenze relevanten Parameter der Schubspannung und des Speichermoduls, sowie der linear viskoelastische Bereich wiedergegeben.

Aus Tabelle 1 ist ersichtlich, dass sich bei gleicher Einsatzmenge an nichtionischem Tensid auf die unpolare Flüssigkeit bei den Tensiden mit einem OH/C- Atom Verhältnis von etwa 4 die besten Gelfestigkeiten zeigen. Es wurde ebenfalls beobachtet, dass die Gelfestigkeiten von der Menge des eingesetzten Tensids abhängig sind, und bei höheren Einsatzmengen höhere Festigkeiten erzielt werden (Ergebnisse nicht gezeigt). In Tabelle 1 waren die Speichermoduleigenschaften für alle auf C5-Zuckern und C5- Zuckeralkoholen beruhenden nicht ionischen Tenside besser als für das analoge auf dem C6- Zuckeralkhol Sorbitol beruhende System. Die Proben zeigten zudem einen hohen viskoelastischen Bereich, d.h. einen Bereich, in dem die Probenstruktur erhalten bleibt bevor eine Verformung (z.B. durch Fließen) eintritt (d.h. Gele mit einem hohen Wert des viskoelastischen Bereich sind bei einer höheren Belastung des Gels noch stabil).
Durch einen verbesserten viskoelastischen Bereich lässt sich beispielsweise bei Lebensmitteln die Bissfestigkeit/das Mundgefühl, die Festigkeit einer Farbe, die Pastenstabilität z.B. von Sonnencreme (zur Verbesserung der Dosierbarkeit), oder die Formstabilität im 3D-Druck verbessern.
In Tabelle 2 wurden dieses Ergebnis für die Gelierung von Isopropylpalmitat mit nicht-ionischen Tensiden, die auf Estern und Ethern beruhen, bestätigt.
Aus Tabelle 3 wird ersichtlich, dass ein Kühlungsschritt die Festigkeit und Elastizität der Gele erhöht. Fließgrenze und Materialelastizität können daher über die Verwendung eines Kühlungsschrittes beeinflusst werden. Weiterhin wird aus Tabelle 3 ersichtlich, dass für Xylose bei höheren C/OH Atomverhältnissen ein höherer viskoelastischer Bereich und höhere Schubspannungs- und Speichermodulwerte erhalten werden.
In Tabelle 4 zeigt sich für alle untersuchten Gele ein viskoelastisches Verhalten.
Claims
1. Monophasiges Gel umfassend eine unpolare Flüssigkeit und ein nichtionisches Tensid ausgewählt aus Estertensiden der Formel ROC(O)R1 oder RC(O)OR2 oder Ethertensiden der Formel ROR2, wobei RO des Rest eines Zuckers oder Zuckeralkohols, RC(O)O eine Zuckersäure, OC(O)R1 einen Fettsäurerest und R2 einen Fettsäurealkoholrest bezeichnet, wobei der Zucker ein C5 oder C6 Zucker ist, die Zuckersäure und der Zuckeralkohol eine davon abgeleitete Zuckersäure bzw. ein davon abgeleiteter Zuckeralkohol ist, und die Fettsäure oder der Fettsäurealkohol eine C- Kettenlänge von mindestens 6 aufweist und wobei das nicht-ionische Tensid ein OH-Gruppen zu C-Atomverhältnis im Bereich von 1:3 bis 1:8 aufweist.
2. Monophasiges Gel gemäß Anspruch 1, dadurch gekennzeichnet, dass das Gel ein nicht-ionisches Estertensid der Formel ROC(O)R1 enthält, wobei R1 den Rest einer unverzweigten oder verzweigten gesättigten oder ungesättigten Fettsäure mit einer C-Kettenlänge im Bereich von 8 bis 20, die bevorzugt ausgewählt ist aus Caprylsäure, Pelargonsäure, Caprinsäure, Laurinsäure, Myristinsäure, Palmitinsäure, Margarinsäure, Stearinsäure, Arachinsäure, Caproleinsäure, Undecylensäure, Myristoleinsäure, Palmitoleinsäure und Ölsäure oder den Rest einer verzweigten Fettsäure mit ein oder mehreren Methylseitenketten oder den Rest einer ß- Hydroxyfettsäure bezeichnet.
3. Monophasiges Gel gemäß Anspruch 1, dadurch gekennzeichnet, dass das Gel ein nicht-ionisches Ethertensid der Formel ROR2 enthält, wobei R2 den Rest unverzweigten oder verzweigten gesättigten oder ungesättigten Fettsäurealkohole mit einer C-Kettenlänge im Bereich von 10 bis 20, bevorzugt ausgewählt aus Fettsäurealkoholen von Caprinsäure, Laurinsäure, Myristinsäure, Palmitinsäure, Margarinsäure, Stearinsäure, Arachinsäure, Caproleinsäure, Undecylensäure, Myristoleinsäure, Palmitoleinsäure, Ölsäure, Hydroxydecansäure abgeleiteten Fettsäurealkoholen bezeichnet.
4. Monophasiges Gel gemäß Anspruch 1, dadurch gekennzeichnet, dass das Gel ein nicht-ionisches Estertensid der Formel RC(O)OR2 enthält, wobei R2 den Rest eines unverzweigten oder verzweigten gesättigten oder ungesättigten Fettsäurealkohols mit einer C-Kettenlänge im Bereich von 10 bis 20 bezeichnet, der bevorzugt durch Reduktion erhältlich ist aus Caprinsäure, Laurinsäure, Myristinsäure, Palmitinsäure, Margarinsäure, Stearinsäure, Arachinsäure, Caproleinsäure, Undecylensäure, Myristoleinsäure, Palmitoleinsäure, Ölsäure, oder Hydroxydecan säure.
5. Monophasiges Gel gemäß mindestens einem der vorangehenden Ansprüche, dadurch gekennzeichnet, dass das Gel thixotrophe Eigenschaften aufweist.
6. Monophasiges Gel gemäß mindestens einem der vorangehenden Ansprüche, dadurch gekennzeichnet, dass der in dem nicht-ionischen Estertensid der Formel ROC(O)R1 oder RC(O)OR2 oder Ethertensid der Formel ROR2 enthaltene C5 oder C6 Zucker, die Zuckersäure und der Zuckeralkohol ausgewählt ist aus der Gruppe umfassend Xylose, Arabinose, Rhamnose, Glucose, Galactose, Mannose, Sorbose, Fructose, Xyluronsäure, Glucuronsäure, Galacturonsäure, Xylitol, Arabitol, Mannitol, Sorbitol, Gluconsäure, Galactonsäure und Xylonsäure.
7. Monophasiges Gel gemäß mindestens einem der vorangehenden Ansprüche, dadurch gekennzeichnet, dass das nicht-ionische Ester- oder Ethertensid einen HLB-Wert im Bereich von 6 bis 14, bevorzugt von 7 und 12 aufweist.
8. Monophasiges Gel gemäß mindestens einem der vorangehenden Ansprüche, dadurch gekennzeichnet, dass das nicht-ionische Ester- oder Ethertensid einen Anteil von 0,05 bis 7 Gew.-%, bevorzugt 0,25 bis 5 Gew.-% und weiter bevorzugt 0,5 bis 3 Gew. -% an dem monophasigen Gel ausmacht.
9. Monophasiges Gel gemäß mindestens einem der vorangehenden Ansprüche, dadurch gekennzeichnet, dass die unpolare Flüssigkeit ausgewählt ist aus der Gruppe umfassend Speiseöle, Pflanzenöle, Fischöle, Insektenfette, Talg, Kerosin, Isopropylpalmitat, Isopropylmyristat, Pentan, Hexan, Getan, iso-Octan, Decan, Dibutylether, Ethylacetat, Cyclohexan, Cylcopentan, Cyclooctan, Isopropanol, Ethyllaurat, Ethylmyristat, Ethylpalmitat, Terpene, Glycolether und Dimethylsulfoxid.
10. Monophasiges Gel gemäß mindestens einem der vorangehenden Ansprüche, dadurch gekennzeichnet, dass die unpolare Flüssigkeit einen Anteil von 80 bis 99,9 Gew.-% bevorzugt 90 bis 99,75 Gew.-% und weiter bevorzugt 95 bis 99,5 3 Gew.-% an dem monophasigen Gel ausmacht.
11. Monophasiges Gel gemäß mindestens einem der vorangehenden Ansprüche, dadurch gekennzeichnet, dass das Gel eine Fließgrenze nach 24h mit einer Schubspannung im Bereich von mehr als 0,1 Pa, bevorzugt im Bereich von 0,1 bis 20 Pa und einem Speichermodul von mindestens 5 Pa, bevorzugt im Bereich von 8 Pa bis 500 Pa, aufweist.
12. Verfahren zur Herstellung eines monophasigen Gels nach einem der Ansprüche 1 bis 11, umfassend die Schritte i) Bereitstellen einer Mischung aus unpolarer Flüssigkeit und mindestens einem nicht-ionischen Ester- oder Ethertensid, wie in Anspruch 1 angegeben; ii) Erwärmen der Mischung, bevorzugt auf eine Temperatur im Bereich von 30°C und 120°C, weiter bevorzugt 40 bis 100°C, für einen Zeitraum, bis sich ein homogenes Gemisch ausgebildet hat; iii) Ruhen lassen der Mischung der Mischung unter Ausbildung eines monophasigen Gels.
13. Verfahren nach Anspruch 12, wobei die Mischung zur Ausbildung eines homogenen Gemischs in Schritt ii) für einen Zeitraum von 5 Min bis 2 h und bevorzugt 10 Min bis 60 Min erwärmt wird.
14. Verfahren nach Anspruch 12 oder 13, wobei die Ausbildung des homogenen Gemischs in Schritt ii) durch eine mechanische Behandlung ausgewählt aus der Gruppe umfassend Schütteln, Rühren, Ultraschall und Vibration unterstützt wird.
15. Verwendung eines monophasigen Gels gemäß einem der Ansprüche 1 bis
11 zur Texturierung von Lebensmittelprodukten, Texturierung von Kosmetikprodukten, Formulierungen für Pharmazeutika, Membranen, Phasentransfermaterialien, oder Anti-Fouling-Oberflächenbeschichtungen, Verdunstungsbarrieren, Farben und Lacke, 3D-Druck.
