Eine vorteilhafte Ausführung des Verfahrens sieht vor, dass die Luftanalysesensoranordnung einen Multispektralsensor umfasst. Vorteilhaft bei dem erfindungsgemäßen Verfahren ist es, dass die Steuerungsvorrichtung der Dunstabzugshaube aus den Messwerten des Multispektralsensors den genauen Leistungsbedarf des Lüfters auf Basis der Wrasenanalyse erkennt. Hierdurch kann die Dunstabzugshaube besonders energiesparend betrieben und Geräuschemissionen können hervorragend minimiert werden. Bei dem Multispektralsensor handelt es sich bevorzugt um einen optischen Sensor, welcher durch Vermessung der wellenlängenabhängigen Lichtabsorption, -reflexion oder -streuung verschiedene Bestandteile der angesaugten Luft selektiv erkennen kann. Z.B. kann der Multispektralsensor so ausgestaltet sein, dass er auf einer Mehrzahl von Kanälen (bei einer praktischen Realisierung z.B. mehr als zehn) Kanälen gleichzeitig mit unterschiedlichen Wellenlängen Partikel in der Luft messen kann. Hierdurch kann der Multispektralsensor die in die Dunstabzugshaube eintretenden Gase (Rauch, usw.) noch besser unterscheiden. Der Multispektralsensor kann anhand der erfassten Partikel im Luftstrom beispielsweise zwischen Wasserdampf und Bratdämpfen unterscheiden. Aber auch schmelzender Kunststoff, Nebel, Öl-Dunst, Flüssig-Brand oder Zigarettenrauch können über den Multispektralsensor erkannt werden. Die spektrale Empfindlichkeit des Multispektralsensors wird vorteilhafterweise durch einzelne Kanäle definiert, die etwa 380 nm bis 1000 nm mit 12+2 Kanälen abdecken.
