Definitions
- the present invention relates to an extractor hood, suitable for extracting a cooking device in the form of a combi steamer, a rotisserie or an oven.
- the present invention relates to a cooking device in the form of a combi steamer, a rotisserie or an oven with such an extractor hood.
- the steam or vapors places a load on the kitchen space, so that efforts are made to clean and also dehumidify the steam or vapors, the cleaned air being fed back into the kitchen space or the installation space of the cooking appliance.
- the extractor hood has a filter housing, with a first filter arrangement in the form of a filter block or filter pack with three different filters, namely a mechanical filter, an electrostatic filter and an activated carbon filter.
- the mechanical filter and the electrostatic filter are used to filter out grease and solid particles, whereas the activated carbon filter is used more to filter odors, with the aim according to DE 10 2013 104 466 A1 is to aspirate aerosols.
- a further, second filter arrangement in the form of a plurality of UV radiation sources is located in the flow path behind the filter pack.
- a blower or fan is provided, which is able to generate a gas volume flow and is used to suck in the gas / gas mixture to be cleaned and to discharge it after cleaning from the extractor hood.
- a disadvantage of this prior art is, inter alia, that the UV lamps have a considerable power requirement of at least 200 W to 600 W per UV lamp, four of which are provided and, in addition, a semi-circular protective coating of the UV lamps is required, which made of relatively expensive materials, such as a gold coating.
- an extractor hood for a cooking appliance is known, with a first opening into which exhaust air from the cooking appliance can flow in via an exhaust air duct in the rear area of the extractor hood and is supplied to a condensation device. Ambient air is sucked into a second opening provided in the front area of the extractor hood.
- the exhaust air from the cooking space is guided in a meandering flow path through the condensation device, it also being fed to a UV treatment device.
- An activated carbon filter is provided at the end of the condensation device, through which the exhaust air flows from the cooking space. Only then is it mixed with the ambient air and flows together with it through the condensation device in a second flow path, which cools the condensation device, which is thus designed as a heat exchanger.
- a fan that is connected to it, the exhaust air is forced through the HEPA filter together with the ambient air and flows out at the top of the extractor hood.
- a disadvantage of the extractor hood DE 20 2011 050 141 U1 is that a corresponding contamination can occur in the condensation device by separating vapors. Furthermore, it is usually in the ambient air in commercial kitchens there is also a particle, fat droplet and odor contamination, whereby this ambient air is only cleaned by the HEPA filter. Dehumidification of moist ambient air, for example by vapors from other cooking and cooking appliances or even after opening the cooking compartment door of the cooking appliance located under the extractor hood and a sudden escape of remaining steam in the cooking compartment, does not result in any further dehumidification and, for example, aerosols and odors in the ambient air not cleaned. In addition, a more energy-consuming UV lamp device is still used for cleaning.
- a device for filtering contaminated air which has an eddy current filter, a filter used for grease separation, a filter for air drying and an odor filter. All filters are arranged in a cassette. Since the individual filters are loaded to different extents, an exchange of the entire filter arrangement is uneconomical.
- the present invention is therefore based on the object of proposing a simple, effective and energy-saving extractor hood which is suitable for extracting a cooking appliance in the form of a combi steamer, a rotisserie or an oven.
- the activated carbon filter has both a large surface area and good flowability and is made up of activated carbon filter elements which have a honeycomb structure. This will make one excellent flow through the activated carbon filter and created an extractor hood with a large volume throughput.
- the activated carbon filter of the extractor hood of the present invention advantageously has a honeycomb structure with honeycombs which can have a square, generally rectangular, hexagonal, generally polygonal, oval or circular cross-sectional shape. This structure creates flow channels for the gaseous medium to be cleaned and enables complete cleaning of odors.
- the filter elements are stacked in a filter frame.
- the filter elements are advantageously formed from a composite material made of activated carbon and ceramic.
- the first filter arrangement is movably mounted in a shaft and can be removed therefrom.
- filter cleaning or filter replacement is possible in a simple manner.
- the individual filters can either be cleaned or replaced when their capacity has reached a limit.
- the second filter arrangement after removal of the first filter arrangement, is accessible from the outside through the inlet opening or through the shaft and is also designed to be removable. This allows a complete filter change to be carried out without time-consuming partial disassembly of the extractor hood, as is the case with the prior art.
- an exhaust air expansion channel is formed below the bottom of the filter housing, which can be connected to an exhaust air channel of the cooking device.
- a (partial) separation is advantageously carried out with the aid of the exhaust air expansion duct made by vapors so that the exhaust air is already partially cleaned when entering the first filter arrangement.
- the exhaust air expansion channel serves as a condensation device and that further, possibly complex, condensation devices are not required.
- a skewed bottom plate advantageously limits the exhaust air expansion channel and returns the condensate to the exhaust air channel of the cooking device.
- the base plate thus has a double inclination in the direction of the exhaust air duct of the cooking device arriving from below, which at the same time also serves as a discharge duct for the condensate.
- the inlet opening of the extractor hood is in the assembled state on the device above and in front of the front of the cooking device. This enables the steam that escapes suddenly when the cooking chamber door is opened to be drawn into the inlet opening of the extractor hood.
- the first filter arrangement is accommodated in a frame arrangement which, in the lowest position in the installed position, has at least one recess for draining off condensate and grease. This enables the substances filtered by the first filter arrangement to be discharged from the filter arrangement during operation of the extractor hood.
- An ambient air supply channel is advantageously provided below the exhaust air expansion channel, via which ambient air can be supplied to the cooking device.
- a collecting device for vapors or fat dripping from the first filter arrangement is formed at the front end of the exhaust air expansion channel. This prevents the dripping vapors or the fat falls down onto the floor in front of the cooking appliance and creates the corresponding contamination. The dripping vapors or the fat are then introduced into the exhaust air expansion duct and move along the skewed base plate to the exhaust air duct and are fed from there to the sewer system which is connected to the cooking device.
- the present invention also includes a cooking device in the form of a combi steamer, a rotisserie or an oven, with a housing in which a cooking space is formed, which can be closed by a cooking space door, a heater for heating the cooking space, an exhaust air duct, an air supply duct and one Liquid drainage channel.
- the cooking appliance has an extractor hood according to the invention on the top of its housing.
- Fig. 1 is shown schematically an extractor hood 1 according to the invention, which is arranged on a cooking appliance 3.
- the cooking device 3 can be a combi steamer, a rotisserie or an oven, these devices being widely known in the prior art.
- the cooking device 3 has a cooking chamber 5, in which a fan wheel 7 is arranged, which serves to circulate the cooking chamber atmosphere. Further details, such as a heater, a steam generating device for steaming the cooking chamber atmosphere, etc. are omitted for the sake of simplifying the illustration.
- the cooking space 5 is closed by means of a cooking space door which has a handle 11 for its actuation.
- a drain opening 13 is provided in the bottom of the cooking space 15 in a conventional manner, through which the cooking space atmosphere can be discharged.
- a discharge box 17 is located downstream of the discharge opening 13 and functions as a condensation device and condenses at least part of the vapors discharged through the discharge opening 13.
- a discharge box 17 is for example in the DE 10 2008 012 961 A1 described by the applicant.
- An arrow 19 is indicated to clarify the removal of the vapors from the cooking space atmosphere of the cooking space 5.
- the condensed vapors can be discharged from the extinguishing box 17 via a drain line 21, the drain line 21 being connected to a sewer network.
- the remaining exhaust air from the cooking space 5 is discharged upwards via an exhaust air duct 23 according to arrow 25. A certain dehumidification and cooling of the exhaust gas discharged from the cooking space 5 has already taken place through the extinguishing box 17.
- the exhaust air duct 23 opens into an opening 29 into an exhaust air expansion duct 31 of the extractor hood 1.
- the exhaust air expansion duct 31 extends over the entire width of the extractor hood 1 and thus has a significantly larger volume than the exhaust duct 23.
- the moves in the exhaust air expansion channel 31 Exhaust air from the exhaust air duct 23 further in the direction of the outlet opening 32 of the exhaust air expansion duct 31, this being bounded at the bottom by a base plate 27 and at the top by a base wall 35 of a filter housing 33 of the extractor hood 1. How out Fig. 1 can be seen, the exhaust air moves in the exhaust air expansion channel 31 according to the arrows 34.
- the filter housing 33 of the extractor hood 1 has, in addition to the bottom wall 35, a top wall 37, two side walls 39, a rear wall 41 and a front wall 43.
- the front wall 43 is angled and extends to the bottom wall 35, an angled opening 45 being formed in the angled section, which serves for the entry of ambient air according to arrow 46.
- Fig. 1 shows the size relationships between incoming exhaust air according to arrow 34 and incoming ambient air according to arrow 46 accordingly.
- the proportion of the cooling ambient air is significantly higher than the proportion of the exhaust air from the cooking chamber 5, which means that due to the mixing of the two air flows, the exhaust air from the cooking chamber 5 is cooled accordingly before it passes behind an outlet opening 32 of the exhaust air expansion channel 31 and behind the Reach first filter arrangement 47 arranged in inlet opening 45.
- the first filter arrangement 47 is designed in the form of a filter package and has three components.
- a flame protection / grease filter 49 consisting essentially of metal, which carries out a first grease separation.
- a sorption filter for further separation of remaining grease particles and other larger particles from the air stream, which is designed in particular as a sponge filter 51, for example in the form of a filter mat made of foam, preferably made of flexible polyurethane foam.
- Air flow is understood to mean the flow of exhaust air or vapors and / or steam from the cooking device and the ambient air. After passing through the first filter arrangement 47, the air flow is cleaned of particles and grease.
- the first filter arrangement 47 is movably arranged in a shaft 55 and can be removed therefrom.
- the air flow cleaned of fat and particles is fed according to the flow path, represented by arrows 57, to a second filter arrangement 59, which is designed as an activated carbon filter.
- the second filter arrangement 59 is designed in the form of an activated carbon filter in a perspective view.
- the activated carbon filter consists of a plurality, in the exemplary embodiment according to Fig. 9 A total of 36 individual essentially identical filter elements 82 are formed.
- the filter elements 82 are arranged tightly stacked in a filter frame 84.
- the filter frame 84 is formed, for example, from sheets welded together. How out Fig. 9 can be seen, there is a lattice structure 90 on the front side for fixing the individual filter elements 82 in the filter frame 84.
- the lattice structure 90 has vertical struts 86 and horizontal struts 88 which cover the separating surfaces between the individual filter elements 82 and the separating surfaces between filter elements 82 and filter frame 84, whereby the filter elements 82 are prevented from slipping forward.
- the back of the second filter arrangement 59 is not shown, which for the same purpose as the grating structure 90 on the front also has a grating structure 90.
- Fig. 10a is in front view and in Fig. 10b a single filter element 82 is shown in side view.
- the individual filter element 82 has a honeycomb structure 92.
- the filter element 82 has an essentially square cross section, for example with a side length of 48 mm.
- the honeycomb structure 92 has individual honeycombs 94, which form flow channels for the exhaust air, as a result of which excellent flow-through capability of the second filter arrangement 59 is achieved.
- the length of the filter element is as from Fig. 10b is clearly larger than the side length of the filter cross-section and is approx. 110 mm in the example shown. Other dimensions are of course within the scope of the present invention.
- honeycombs 94 of the honeycomb structure 92 are not limited to a square cross section. Alternatively, they can have the following cross sections: generally rectangular, hexagonal, generally polygonal, oval or circular, and modifications thereof.
- the second filter arrangement 59 is located, among other things, from FIGS Fig. 1 and 2nd emerges, in front of an opening 60 in a separating plate 61, so that the air flow according to arrows 57 can only move through the second filter arrangement 59, which is indicated by the arrows 58.
- a fan 63 is provided in the filter housing 33, which serves to suck it in and through which the air flow moves to an opening 65 which opens into an outlet channel 67 in the upper section of the filter housing 33.
- the outlet channel 67 is from the top wall 37 and an intermediate wall 64 and laterally delimited by the side walls 39. From there, the cleaned air flow is guided according to the arrows 66 to the front of the extractor hood 1 and escapes from the filter housing 33 via an outlet opening 69.
- the person skilled in the art can easily see that the air flow can be directed in any direction and the outlet duct 67 accordingly the desired location at which the air is to escape can be designed and arranged.
- the outlet duct 67 can also be completely omitted if the air is to escape upwards.
- the cleaned air flow can also be directly upwards, straight out of the drain channel 67, to the rear or to the side be dissipated.
- an inlet air duct 71 is formed which has an inlet opening 73 on the rear through which inlet air can enter the inlet air duct 71 according to arrow 75.
- a cooking space supply air duct 77 opens into the underside of the supply air duct 71, via which supply air can be introduced into the cooking space 5 according to arrow 78.
- the exhaust air discharged from the cooking space 5 is fed via the exhaust air duct 23 to the exhaust air expansion duct 31 of the extractor hood 1 and flows from the rear of the cooking device 3 and the extractor hood 1 to the front according to arrows 34.
- the bottom wall 35 is cooled by the ambient air entering the filter housing 33, so that condensation of the heated exhaust air takes place due to the temperature difference, and thus further pre-cleaning of the exhaust air is made possible.
- the dripping condensate is along the skewed bottom plate 27, as further below using the 8 and 8a is further explained, returned to the opening 29 in the base plate 27 above the exhaust air duct 23 and flows back along the exhaust air duct 23 in the direction of the extinguishing box 17, after which this discharge is discharged via the discharge line 21.
- Fig. 2 that differ from Fig. 1 differs in that the cooking space door 9 is open.
- FIG. 3 the extractor hood 1 is shown schematically in side view
- Fig. 3a the first filter arrangement 47 is shown on an enlarged scale.
- the arrows 80 are intended to draw attention to the special design of the first filter arrangement 47 according to the invention.
- Fig. 3a Recesses 81, 83 and 85 of a frame arrangement 48 are shown. Separated vapors, grease and particles can be discharged from the first filter arrangement 47, in particular the flame protection filter 49 and the sponge filter 51, via the cutouts 81, 83 and 85, which is promoted in particular by the inclination of the first filter arrangement 47.
- the drained materials then meet the extension of the bottom wall 27 and are then passed to the opening 29 in the bottom plate 27 for introduction into the exhaust air duct 23.
- the flow of the filtered media increases the service life of the first filter arrangement 47.
- the discharge can also take place in a transverse channel, from where it is forwarded to the base plate 27.
- the first filter arrangement 47 can be taken out of the shaft 55 or moved out and in again according to the double arrow 87.
- a recessed grip 89 is formed in the lower front area.
- the shaft 55 is, as in particular, from Fig. 5 emerges, formed from an upper pair of L-shaped longitudinal rails 91, one of which is each attached to the corresponding side wall 39 and a lower pair of L-shaped longitudinal rails 93, which are also each attached to the corresponding side wall 39.
- the four longitudinal rails 91, 93 thus form a good guide for the first filter arrangement 47.
- An L-shaped connecting rail 95 which connects the respective longitudinal rails 91 and 93, is also provided on each side wall 39 at the end of the shaft 55, which stops the first filter arrangement 47 form. If necessary, there can also be at least one further cross rail (not shown) which extends between the two side walls 39 from one connecting rail 95 to the other.
- the removal of the second filter arrangement 59 that is to say the activated carbon filter constructed with a honeycomb structure, is shown schematically.
- the second filter arrangement 59 can be reached from the outside either through the inlet opening 45 or a shaft opening 56 of the shaft 55 without parts of the extractor hood 1 having to be removed. How out Fig. 6 can be seen, the second filter arrangement 59 is pivoted forward about an upper articulation axis 97 according to arrow 99, released and, as in FIG Fig. 7 shown, through the inlet opening 45 out of the interior of the filter housing 33 according to arrow 101. The attachment of an exchanged second filter arrangement is accordingly carried out in the opposite manner.
- the second filter arrangement 59 can alternatively be screwed on, pushed in in a similar shaft to that of the first filter arrangement 47, or comparable measures.
- both the first filter arrangement 47 and the second filter arrangement 59 can be inserted through the existing openings 45 and 56 and the corresponding replacement filter arrangement can be introduced again without further measures, for example removal of covers, being necessary.
- the filter can not only be replaced easily, but also quickly.
- the second filter arrangement 59 is arranged in an inclined position.
- Alternative arrangements, for example in a purely vertical position, parallel to the fan 63 are possible.
- Fig. 8 the bottom plate 27 is shown in plan view. As already mentioned, it is double-inclined and thus arranged skewed in such a way that the deepest area lies at the opening 29, which is connected to the exhaust air duct 23. The condensate separated in the exhaust air expansion channel 31 can thus run to the opening 29.
- Fig. 8a is the area A of Fig. 8 shown enlarged.
- a drain tongue 105 is provided which has a central axis 107 which is recessed downwards and thus forms a channel-shaped spout. This prevents possible leaks between the exhaust air duct 23 and the opening 29 from flowing through condensate and landing on the top of the cooking device 3.
- the spatial arrangement of the cooking space supply air duct 77 can be seen below the base plate 27.
- the embodiment of the extractor hood 1 according to the invention Fig. 11 shows the possibility of separate removal of the flame protection / grease filter 49 from the first filter arrangement 47.
- This offers several advantages. First, the filter 49 that was first reached by the exhaust air becomes significantly more dirty than the one behind it lying filters 51 and 53. Second, the first filter arrangement 47 can have a considerable weight, so that it can be difficult for the operator to handle it at the appropriate height in space. The partial disassembly or assembly of the first filter arrangement is thus much easier. This is all the more so as thirdly the filter 49 can be pulled down through the exhaust air inlet opening 45 and not only through the shaft opening 56.
- the present invention is not limited to the exemplary embodiments shown.
- the pocket filter 53 can also be arranged separately from the other two filters 49 and 51 at a certain distance in the flow path.
- a particularly advantageous extractor hood is thus created which is simple in construction, has energy-saving and effective filter arrangements which, moreover, can be removed and replaced from the filter housing in a very simple manner.

Furthermore, the present invention relates to a cooking device in the form of a combi steamer, a rotisserie or an oven with such an extractor hood.
When cooking food in commercial kitchen cooking appliances, a gas mixture of moisture, in particular steam, particles and fat, is created in the cooking space, which is led out of the cooking appliance via an exhaust air duct in order to reduce the excess pressure in the cooking appliance caused by the moisture or steam. In the case of combi steamers in particular, steam is additionally generated in or introduced into the cooking space for a gentle cooking of the food, whereby the pressure in the
At the end of the cooking process, there is usually a correspondingly moist atmosphere in the cooking chamber of the cooking device, the damp atmosphere or the steam suddenly escaping upwards when the cooking chamber door of the cooking device is opened, whereby particles and fat drops, the entire exhaust air, are also referred to as vapors , sweeps away.
The steam or vapors places a load on the kitchen space, so that efforts are made to clean and also dehumidify the steam or vapors, the cleaned air being fed back into the kitchen space or the installation space of the cooking appliance.

The present invention is therefore based on the object of proposing a simple, effective and energy-saving extractor hood which is suitable for extracting a cooking appliance in the form of a combi steamer, a rotisserie or an oven.
This object is solved by the features of
- a filter housing with a bottom wall, a top wall, two side walls, a rear wall and a front wall into which the gas to be cleaned, in particular a mixture of vapors and steam from the cooking chamber of the cooking device and the ambient air, can be flowed in,
- an inlet opening arranged substantially obliquely between the bottom wall and the front wall, behind which a first filter device for filtering or separating grease and particles is arranged,
- a second filter arrangement, which is located in the flow path of the gas to be cleaned, behind the first filter arrangement,
- a fan which is able to generate a gas volume flow and is used to draw in the gas to be cleaned and to discharge it after cleaning from the extractor hood, and
- an outlet channel of the cleaned gas,
- the first filter arrangement being formed and having three components as a filter block or filter pack,
- a first component which is designed as a flame protection filter,
- a second component which is designed as a sorption separator, in particular as a sponge filter, and
- a third component, which is designed as a filter for fine impurities, in particular as a pocket filter, and wherein after passing through the first filter arrangement, the air flow is cleaned of particles and fat,
- wherein the second filter arrangement is formed from an activated carbon filter, which has both a large surface area and good flowability, and is made up of activated carbon elements in the form of a honeycomb structure, and
- wherein the exhaust air flows into the first filter arrangement together with the ambient air.
Surprisingly, it has been shown that the arrangement of a total of four different filters, a flame protection filter, a sorption separator, in particular in the form of a sponge filter, a pocket filter for fine impurities and an activated carbon filter is sufficient to achieve effective cleaning of both the exhaust air and the ambient air . According to the invention, the activated carbon filter has both a large surface area and good flowability and is made up of activated carbon filter elements which have a honeycomb structure. This will make one excellent flow through the activated carbon filter and created an extractor hood with a large volume throughput.
The activated carbon filter of the extractor hood of the present invention advantageously has a honeycomb structure with honeycombs which can have a square, generally rectangular, hexagonal, generally polygonal, oval or circular cross-sectional shape. This structure creates flow channels for the gaseous medium to be cleaned and enables complete cleaning of odors.
It is also advantageous that the filter elements are stacked in a filter frame.
The filter elements are advantageously formed from a composite material made of activated carbon and ceramic.
It is also advantageous that the first filter arrangement is movably mounted in a shaft and can be removed therefrom. By simply pulling the first filter arrangement out of the extractor hood and without removing any elements of the extractor hood, such as covers, filter cleaning or filter replacement is possible in a simple manner. After removing the first filter arrangement, the individual filters can either be cleaned or replaced when their capacity has reached a limit.
Furthermore, it is particularly advantageous that the second filter arrangement, after removal of the first filter arrangement, is accessible from the outside through the inlet opening or through the shaft and is also designed to be removable. This allows a complete filter change to be carried out without time-consuming partial disassembly of the extractor hood, as is the case with the prior art.
It is also advantageous that an exhaust air expansion channel is formed below the bottom of the filter housing, which can be connected to an exhaust air channel of the cooking device. A (partial) separation is advantageously carried out with the aid of the exhaust air expansion duct made by vapors so that the exhaust air is already partially cleaned when entering the first filter arrangement.
In particular, it is advantageous that the exhaust air expansion channel serves as a condensation device and that further, possibly complex, condensation devices are not required.
A skewed bottom plate advantageously limits the exhaust air expansion channel and returns the condensate to the exhaust air channel of the cooking device. The base plate thus has a double inclination in the direction of the exhaust air duct of the cooking device arriving from below, which at the same time also serves as a discharge duct for the condensate.
It is also advantageous that the inlet opening of the extractor hood is in the assembled state on the device above and in front of the front of the cooking device. This enables the steam that escapes suddenly when the cooking chamber door is opened to be drawn into the inlet opening of the extractor hood.
It is also advantageous that the first filter arrangement is accommodated in a frame arrangement which, in the lowest position in the installed position, has at least one recess for draining off condensate and grease. This enables the substances filtered by the first filter arrangement to be discharged from the filter arrangement during operation of the extractor hood.
When operating a cooking device, such as a combi steamer, a rotisserie or an oven, on the one hand, excess pressure atmosphere is discharged via the exhaust air duct, but on the other hand ambient air is at least temporarily fed back. An ambient air supply channel is advantageously provided below the exhaust air expansion channel, via which ambient air can be supplied to the cooking device.
It is also advantageous that a collecting device for vapors or fat dripping from the first filter arrangement is formed at the front end of the exhaust air expansion channel.
The present invention also includes a cooking device in the form of a combi steamer, a rotisserie or an oven, with a housing in which a cooking space is formed, which can be closed by a cooking space door, a heater for heating the cooking space, an exhaust air duct, an air supply duct and one Liquid drainage channel. The cooking appliance has an extractor hood according to the invention on the top of its housing.
