Da die Querschnittsvermessung mittels der Scaneinrichtung 10 zeitlich kurz vor dem Passieren der Niederhaltereinrichtung 13 erfolgt, verbleibt genügend Zeit, um die ermittelten Querschnittsinformationen in eine stets optimale Positionierung des Anpresselements 15 umzusetzen. Bei Verwendung eines selbsthemmenden Antriebs für die Hubstangen 16 des Anpresselements 15, ist das Anpresselement 15 praktisch nicht in vertikale Richtung nachgiebig. Mit der erfindungsgemäß durch die Scaneinrichtung 10 gesteuerten Niederhaltereinrichtung 13 lassen sich somit bedarfsweise auch sehr große Haltekräfte erzeugen, die eine besonders sichere Fixierung des Gutsstrangs während des Schneidvorgangs bewirken. Dabei ist die Gewährleistung einer stets optimalen Niederhaltekraft auch bei Gutssträngen mit über dessen Länge stark schwankender Quer-schnittshöhe möglich, da die Position des Anpresselements 15 fortlaufend und sehr schnell angepasst wird. A method for slicing an elongated food product, a product strand of the food product being laid in a laying area (2) of a slicing machine, an engagement element (19) of a gripper unit (18) being brought into formfitting engagement with a rear end of the product strand in the feed direction (17) and subsequently the product strand being fed continuously toward a slicing unit (8) using the gripper unit (18) and sliced therein, the product strand being pressed in the direction of a support surface (3) of the laying area (2) using a holddown unit (13) essentially only during the cutting procedure, the product strand being secured against tilting during the penetration of the engagement element (19) in the product strand using a fixing unit (22), characterized in that the product strand is fed toward the slicing unit (8) during the penetration of the engagement element (19) of the gripper unit (18) and the fixing using the fixing unit (22), and the gripper unit (18) and at least one contact element (26) of the fixing unit (22), which is in contact with the surface of the product strand, is moved toward the slicing unit (8) at the same velocity.
