Definitions
- the invention relates to the field of gas cooking ovens which, unless otherwise stated, will be called gas ovens throughout the text.
- the invention relates in particular to the field of gas ovens including the muffle has walls having a coating which can be damaged by excessive temperatures.
- the gas ovens of the known prior art comprise a muffle and a sole box located under the muffle.
- the muffle includes a cavity in which food is introduced and which is surrounded by walls.
- the walls of the muffle themselves, or more commonly the lining of these walls can be damaged by excessive temperature.
- the heat from the gas burner (s) included in the bottom box under the muffle can damage the walls and more particularly the wall bottom of the muffle.
- the inner lining of the bottom wall of the muffle can thus be damaged by the heat from the sole box. Indeed, the combustion products from the gas burner (s) contained in the bottom box enter the oven cavity through wall holes bottom of the muffle and licking part of the bottom wall of the muffle and in particular the periphery of these holes.
- the invention provides a solution using a cover intermediate hole which is located between the bottom wall of the muffle and the box sole.
- the particular shape of the intermediate cover allows the products to combustion from the sole box to enter the cavity without entering contact with the bottom wall of the muffle.
- a gas oven comprising a muffle which includes a cavity bounded by walls, a floor box which is located under the muffle and which comprises at least one burner, the wall bottom of the muffle comprising at least one perforated zone, characterized in that the oven has an intermediate cover located between the wall bottom of the muffle and the bottom box, the intermediate cover comprising at least one perforated area located opposite the perforated area of the wall bottom of the muffle, the holes in the hole area of the intermediate cover being substantially opposite holes in the bottom wall of the muffle, the ratio between the size of the holes in the hole area of the intermediate cover and the size of the holes in the hole area of the bottom wall of the muffle of a part and the distance between the hole area of the intermediate cover and the area hole in the bottom wall of the muffle on the other hand being chosen so that the products of combustion coming from the burner and passing through them holes in the hole in the intermediate cover pass through the holes in the hole in the bottom wall of the block without coming into contact with the bottom wall of the muffle
- FIG. 1 shows schematically a view partially exploded in perspective of a preferred embodiment of a gas oven 7 according to the invention.
- the oven 7 has a muffle 6 and a sole box 5.
- the sole box 5 includes at least one burner 50.
- a single burner 50 is shown in Figure 1 for example, but the sole box 5 may include several burners 50.
- the burner 50 is shown diagrammatically under hatched area shape.
- the muffle 6 has a cavity 1 in which food is introduced.
- the cavity 1 is surrounded by walls 2 and 3.
- the wall 3 is the bottom wall of the muffle 6 while the walls 2 are the other walls of the muffle 6.
- the bottom wall 3 has at least one zone hole 30.
- Each hole area 30 has at least one hole 31, of preferably several holes 31.
- the or the burners 50 may or may not be located opposite the zone or zones holes 30 in the bottom wall 3 of the muffle 6.
- the burner 50 placed in the center of a sole box 5, is not opposite the perforated areas 30 placed at the ends of the bottom wall 3 of the muffle 6.
- the intermediate cover 4 comprises at least a hole area 40 each comprising at least one hole 41 and preferably several holes 41.
- the hole area (s) 40 of the cover intermediate 4 are located opposite perforated zones 30 of the wall lower 3.
- Each perforated area 40 of the intermediate cover 4 is located opposite a perforated zone 30 of the lower wall 3.
- the intermediate cover 4 has two perforated zones 40 which are located opposite the two perforated zones 30 of the lower wall 3.
- the holes 41 of the hole area (s) 40 of the cover intermediate 4 are located substantially opposite holes 31 of the one or more perforated areas 30 of the lower wall 3. The optimum is reached when the holes 41 are strictly opposite holes 31, but holes 41 may be slightly offset from the corresponding holes 31 and only be partially opposite these holes 31: the protective effect of the lower wall 3 is still obtained but to a lesser extent.
- the holes 41 of the perforated area 40 of the intermediate cover 4 can for example have the form of simple holes in the substantially flat surface which the perforated area 40 at the level of the holes 41.
- the holes 41 can also by example show the form of chimneys rising towards the bottom wall 3, from the average surface of the hole area 40. Said chimneys can even open into cavity 1 and rise above the bottom wall 3. In the latter case, part of the cover intermediate 4, namely the upper end of the chimneys, is located above from the level of the lower wall 3.
- holes 41 we will speak of "holes 41" to designate all forms for making the holes 41 previously described and for “simple holes” the embodiment in which the holes 41 remain at the same level as the average surface of the perforated area 40 of the intermediate cover 4.
- the sole box 5 preferably does not have a wall upper, it is covered by the intermediate cover 4.
- the cover intermediate 4 can also, for example, be integrated into the sole box 5 of so as to become the upper wall of the sole box 5.
- a burner 50 two zones holes 30 in the bottom wall 3 and two holes 40 in the cover intermediate 4, as in FIG. 1 for example, without limiting the generality of the invention which applies to an oven 7 comprising at least one burner 50, at least one perforated zone 30 of the lower wall 3 and at least zone hole 40 in the intermediate cover 4.
- the intermediate cover 4 can be made in one piece or in several pieces whether linked or not between them.
- the combustion products from the burner 50 of the sole box 5 pass through holes 41 of the perforated areas 40 of the cover intermediate 4, then pass through the holes 31 of the perforated zones 30 of the wall lower 3 before entering the cavity 1.
- the size ratio of the different holes, ratio between the size of a hole 41 of a hole area 40 of the intermediate cover 4 and the size of a corresponding hole 31, that is to say located opposite, of a perforated zone 30 of the lower wall 3, on the one hand, and the distance between this hole 41 and the corresponding hole 31, that is to say located at look of said hole 41, are chosen so that the products of combustion coming out of the holes 41 of the perforated areas 40 of the cover intermediate 4 pass through the holes 31 of the perforated zones 30 of the wall lower 3 without coming into contact with the lower wall 3.
- the wall lower 3 is not deteriorated by direct contact with the products of combustion which are at a very high temperature and which convey a very important heat.
- the intermediate cover 4 is produced in one or more several materials with a high thermal conductivity of so that the intermediate cover 4 has a conductivity sufficient heat for the heat input from the burner 50 is distributed over the surface of the intermediate cover 4 so as to avoid formation of hot spots on the bottom wall 3 of the muffle 6.
- the contribution thermal from the sole box 5 and more particularly from the burner 50 is thus better distributed over the entire surface of the intermediate cover 4.
- the heat then propagates from the intermediate cover 4 to the wall lower 3 is then better distributed equally over the entire surface of the bottom wall 3, which prevents the formation of hot spots on the bottom wall 3.
- the intermediate cover 4 is advantageously made of a sheet with high thermal conductivity, steel for example.
- the walls 2 and 3 in general and the bottom wall 3 of the muffle 6 in particular are preferably made of enamelled sheet, that is to say in sheet metal covered with enamel.
- Gold enamel can break for temperatures high, such as a temperature above 530 ° C.
- the combustion products meanwhile, can reach when the oven 7 is in operating mode and at cruising speed, temperatures ranging for example up to about 800 ° C. It is therefore interesting to avoid that combustion products do not come into direct contact with the bottom wall 3 covered with enamel, when the combustion products from the burner 50 pass through the holes 31 of the perforated zones 30 of the bottom wall 3.
- Figure 2 shows schematically the cover intermediate 4 of the oven 7 which is shown as a whole in FIG. 1.
- the perforated area 40 of the intermediate cover 4 is also a projecting area towards the bottom wall 3 of the muffle 6, as shown for example in Figures 1 and 2.
- this projecting area reduces the distance between the perforated areas 30 of the wall lower 3 and the perforated areas 40 of the intermediate cover 4, which is an advantage as explained later, while increasing the rigidity of the intermediate cover 4, in particular when the latter is present under the shape of a metal sheet.
- the projection area 40 has a trapezoidal shape, the base being directed towards the sole box 5, as shown for example in Figures 1 and 2.
- the intermediate cover 4 is preferably a metal sheet whose production material has a high thermal conductivity, like steel for example.
- the intermediate cover 4 can also be consisting of several sheets welded together or not.
- FIG. 3 diagrammatically represents a perspective view of a detail of the furnace 7 represented in FIG. 1.
- FIG. 3 partially represents a perforated zone 40 of the intermediate cover 4 and the corresponding perforated zone 30, that is to say located opposite said perforated area 40 of the intermediate cover 4, of the bottom wall 3 of the muffle 6.
- the portions of perforated areas 30 and 40 are shown in dotted lines.
- FIG. 3 only a hole 41 in the perforated zone 40 of the intermediate cover 4 and the corresponding hole 31 in the perforated zone 30 in the bottom wall 3 are shown, it being understood that the perforated zones 30 and 40 preferably each have several holes 31 and 41.
- the holes 31 and 41 are circular, but they can have other shapes; what is said below for the diameter of the holes applies to their size in the case of holes of any shape: in the rest of the text and unless otherwise stated, the terms of size and diameter will be used interchangeably.
- the hole 31 of the hole area 30 of the bottom wall 3 has a diameter ⁇ 3 .
- the hole 41 of the hole area 40 of the intermediate cover 4 has a diameter ⁇ 4 .
- Let X be the distance separating the two holes 31 and 41, that is to say, as for example in FIG. 3, the distance separating the plane of the perforated zone 30 from the bottom wall 3 and the plane of the perforated zone 40 of the intermediate cover 4.
- all the holes 31 have the same size and all the holes 41 too, and the distance X remains constant over all of the holes 30 and 40, but the size of the holes of the same hole area can vary as well as the distance X, in which case the following remains valid locally at the level of two corresponding holes 31 and 41, that is to say that the relations given below remain valid for a hole 41 of the perforated zone 40 of the intermediate cover 4, for the corresponding hole 31 of the perforated zone 30 of the bottom wall 3, and for the distance X separating said holes 31 and 41.
- FIG. 4 schematically represents a profile view of a detail of FIG. 3.
- the hole 31, of diameter ⁇ 3 , of the perforated area 30 of the bottom wall 3 is separated by a distance X from the hole 41, of diameter ⁇ 4 , of the perforated area 40 of the intermediate cover 4.
- the combustion products PC coming from the burner 50, not shown in FIG. 4 are represented at the level of the crossing of the hole 41 of the perforated area 40 of the intermediate cover first and from hole 31 of the hole area 30 of the bottom wall 3 then.
- the jet of combustion products PC has, after passing through the hole 41 of the perforated zone 40 of the intermediate cover 4, first a substantially vertical zone of height zv then an expansion zone of height ze.
- the direction of propagation of the jet of combustion products PC is indicated by arrows inside the periphery of the jet.
- the diameter of the jet of combustion products PC at the level of the hole 31 of the hole area 30 of the bottom wall 3 is noted ⁇ .
- the jet of combustion products PC occupies the entire size of this hole 41.
- the size ⁇ 4 of each hole 41 of the hole area 40 of the intermediate cover 4 is preferably chosen to be less than the size ⁇ 3 of the corresponding hole 31 of the perforated zone 30 of the bottom wall 3 of the muffle 6, so that the jet of combustion products PC, which has at the level of this hole 31 a diameter ⁇ substantially equal to or greater than the diameter ⁇ 4 of the hole 41 of the zone hole 40 of the intermediate cover 4, does not come into contact with the bottom wall 3 when it passes through the holes 31 of the hole area 30 of the bottom wall 3.
- the distance X between the holes 31 and 41 is advantageously chosen suf sufficiently small so that, at the level of the hole 31 in the perforated zone 30 of the bottom wall 3, the jet of combustion products PC is still in its substantially vertical zone of height zv. We then have X which is less than or substantially equal to zv.
- the size ⁇ 4 of hole 41 in area 40 of the intermediate cover 4 varies in the opposite direction to the distance X separating the two holes 31 and 41, that is to say that if we want to increase the distance X, we must decrease the size ⁇ 4 of the hole 41, which is a drawback as seen above, and vice versa.
- the distance X between the hole area 40 of the intermediate cover 4 and the hole area 30 of the bottom wall 3 of the muffle 6 is advantageously small enough that the jet of combustion products PC still has a substantially vertical direction at the level of the holes 31 of the perforated zone 30 of the bottom wall 3.
- the diameter ⁇ 3 of the holes 31 of the perforated zones 30 of the bottom wall 3 being worth approximately 15mm
- the diameter ⁇ 4 of the holes 41 of the perforated zones 40 of the intermediate cover 4 is worth approximately 10 to 12 mm while the distance X between holes 31 and 41 is approximately 7 to 8mm.
- the ratio between holes 31 and 41 is approximately 1.5 while the ratio between hole 31 and distance X is approximately 2.
