Abstract

La présente invention concerne un procédé permettant d'indiquer si un article alimentaire a subi une séquence gel-dégel, et consistant à appliquer sur l'article alimentaire un indicateur comportant un premier matériau (3) enfermé entre des parois en microcapsules (4) et un second matériau (5) séparé habituellement du premier matériau par lesdites parois en microcapsules. Les deux matériaux contiennent des substances qui, lorsqu'elles se rencontrent, produisent un changement de couleur, étant toutefois normalement séparées les unes des autres par les parois en microcapsules. Le premier matériau possède de surcroît un liquide, de l'eau de préférence qui, lorsqu'elle gèle se gonfle suffisamment pour rompre les parois en microcapsules (figure 26). De ce fait, lorsque le premier matériau a subi un cycle gel-dégel, il entre en contact avec le second matériau produisant ce changement de couleur indiquant que l'article alimentaire a fait l'objet d'une séquence gel-dégel.
