Definitions
- the present invention relates to a bottom of a tray, crate, box or the like intended for packaging meat or non-meat food products.
- Such packaging is usually made of expanded polystyrene. In known manner, they have side walls and a bottom and are formed by molding.
- Liquid exudates are indeed sources of bacterial proliferation which rapidly degrade food. They cause in particular a change in coloring (example of red meat) and a rancidity of fats.
- absorbent paper has a draining effect preventing stagnation of exudates. However, it does not preserve the contact of the food with the exudates partially soaking in the absorbent paper and therefore does not completely respond to the problem exposed.
- Another solution consists in forming a projecting network on the bottom, for example in the form of a grid.
- the food rests on the upper edges of the grids, which theoretically avoids contact between the food and the bottom.
- This grid causes undesirable marking, for example of the meat.
- the exudates flow easily over the surface of the bottom, to stagnate along the lower edge when the tray is presented inclined.
- This tray has the general shape of a flat-bottomed bowl intended to receive the product and then to be covered with a thin plastic film.
- the flat bottom is lined with a series of fine ribs arranged to support the product at a certain distance above the bottom so that the product does not come into contact with the areas of this bottom which are located between the ribs .
- the air trapped under the thin film can circulate freely in the space thus formed between the product and the bottom.
- Such a tray bottom has the disadvantage of draining in one direction all the exudates. An unsightly pocket is then formed, constituting a "culture broth".
- the object of the invention is to remedy these various drawbacks by proposing a tray bottom reducing the formation of accumulation of exudates when the tray is presented in an inclined manner, and limiting the contact between the meat and the exudates.
- the invention is characterized by the fact that the bottom is substantially flat and has a network of cells. Unlike the embodiments of the prior art, these cells retain exudates which form drops under the effect of surface tension and the partially hydrophobic nature of the expanded polystyrene.
- the cells are formed by oblong cavities having a width corresponding substantially to the section of a drop of exudate and a depth corresponding substantially to half the section of a drop of exudate.
- the exudate drops therefore remain housed in the cavities and the surface tension results in the formation of a curved surface rather than a flow of exudate out of its socket, even when the tray has a significant inclination.
- the width of the cells is between 2.5 and 4.5 millimeters, preferably of the order of 3.0 millimeters, and the depth of the order of 3.0 millimeters.
- the bottom of the cells is rounded and has a radius of curvature of about 1.5 millimeters.
- the drop of exudate thus marries the concavity of the cell, which prevents the formation of an air bubble tending to drive the drop of exudate out of its housing as soon as the tray is tilted.
- the tangent to the upper edge of a cavity is substantially perpendicular to the adjacent flat bottom area, the connection between the side wall of a cavity and the adjacent flat bottom area forming a sharp edge.
- the cells form a bidirectional network.
- the network consists of a first series of oblong cells and a second series of oblong cells, the major axis of the cells of the first series being perpendicular to the major axis of the cells of the second series.
- the adjacent oblong cells of a row are spaced apart by a distance corresponding substantially to the width of a cell, the intersection between two perpendicular rows of cells corresponding to a flat or slightly curved area.
- the largest dimension of a cell is at most equal to 4 times the smallest dimension of said cell.
- the bottom of the tray is shown in Figure 1 in top view.
- the bottom of the tray has a bidirectional network of oblong cells, the main axes of which are aligned.
- the cells have a width of 3 millimeters and a length of 9.5 millimeters.
- the depth of the cells is 3.0 millimeters.
- a first series of cells (1) is formed by cells whose main axis is oriented longitudinally. They are spaced by flat areas or slightly domed (3). The pitch of this first network is about 15 millimeters.
- a second series of cells (2) is formed by cells whose main axis is oriented transversely. They are spaced apart by flat or slightly domed areas (3). The pitch of this first network is also about 15 millimeters.
- the two networks thus form square meshes in the center of which are cavities (6) completing the collection of exudates.
- the radii of curvature of the oblong cells are approximately 1.5 millimeters.
- cavities (6) In the center of some of the flat areas (3) are provided cavities (6) forming complementary receptacles for exudates.
- FIGS 2 and 3 show views along sectional planes AA and BB respectively.
- the tray has an external shape similar to that of trays of the prior art, with side walls (7) and a bottom (8).
- the inner surface of the bottom has the cells (2, 3) and the complementary cavities (6).
- FIG. 4 represents a detailed view of a mesh of the network of cells, on an enlarged scale.
- the network is formed by elementary meshes of 4 oblong cells (10, 11, 12, 13). An elementary mesh is inscribed in a square of 15x15 millimeters.
- a cell has a width of 3 millimeters. Its central part has a rectangular section of 3 x 6.5 millimeters. The total length of the cell is 9.5 millimeters. The ends are rounded in the shape of a semicircle with a radius of curvature of 1.5 millimeters.
- the projection of the cells on the bottom plane occupies an area of about 55 square millimeters.
- the total area of a mesh is 225 square millimeters.
- the surface of the flat zones (3) of a mesh is 170 square millimeters.
- the ratio between the flat surfaces and the alveolar surfaces is therefore approximately 3. In the case of complementary cavities for collecting exudates, the ratio may be slightly lower, for example 2.3.
- This ratio is therefore substantially greater than the projecting surfaces / recessed surfaces ratio of trays of the state of the art having protrusions in the form of grids.
- Meat and non-meat foods are therefore much less marked than in trays according to the state of the art, and this, without prejudice to the capacity for collecting exudates.
- an experiment has made it possible to verify that the maximum volume of absorbable exudates is 5 times lower for a bottom of a tray of the prior art compared to the bottom of a tray according to the invention, having the same capacity and same interior dimensions.
- Figure 5 shows a schematic view of a cell in cross section, when the tray is tilted.
- the exudate forms a drop due to the surface tension and the hydrophobic nature of the expanded polystyrene.
- the "natural" volume of such a drop is a sphere of 3 millimeters in section.
- the drop (15) therefore fits perfectly in the socket (16).
- the tangent (18) at the edge of the cell is substantially perpendicular to the plane of the area (3).
- the edge (17) surrounding the cell is a sharp edge.
- This phenomenon significantly delays the flow of exudates and makes it possible to significantly improve the capacity of the tray to avoid the formation of pockets of exudates in the edges, without the need for reports " surfaces protruding / hollow surfaces "too weak.
- this ratio becomes low, for example less than 1, there is indeed the detrimental phenomenon of marking the meat.
