Claims (8)

  1. Konvektions- und Heizungsofen direkt mit Gas, insbesondere für die Küche von Nahrungsmitteln, bestehend aus einer Einfassung (1), die durch eine Umfangswand (2) und eine Tür (3) geschlossen ist, wobei der Innenraum der Einfassung (1) durch eine Zwischenwand (4) mit Lufteintritts- und Austrittsöffnungen (5, 6) in einen ersten Bereich (7) zur Aufnahme von zu kochenden Nahrungsmitteln und in einen zweiten Bereich (8) unterteilt ist, der einerseits wenigstens einen Gasbrenner (9) enthält, der mit einem Versorgungssystem (10) für ein Verbrennungsgemisch aus Gas und Luft unter Druck verbunden ist, und andererseits wenigstens eine Turbine (11) für eine Zirkulationsbewegung der erhitzten Luft in den beiden Bereichen (7, 8) der Einfassung, wobei der Gasbrenner (9) in der durch die Turbine verursachten Zirkulationsströmung der Luft stromaufwärts von der Turbine (11) angeordnet ist, wobei ein Wasserdampferzeuger (13) für die Einleitung des Wasserdampfes in die Einfassung (1) assoziert ist, dadurch gekennzeichnet, daß die Austrittsöffnungen des Gasbrenners (9) in solcher Art und Weise orientiert sind, daß die evtl. Wasserkondensate, die in dem Brenner (9) gebildet sind, durch Schwerkraft nach außerhalb des Brenners über die besagten Austrittsöffnungen ablaufen können, und von solcher Art und Weise, daß der die Flamme (18) bildende Verbrennungsgasstrom in einer Richtung (I) strömt, die mit der Richtung (II) der von der Turbine (11) abgegebenen ausströmenden Luftströmung in der Nähe des Brenners (9) einen Orientierungswinkel kleiner als ein maximaler Grenzwert bildet, welcher den Abriß der Flamme (18) verursacht.
  2. Ofen nach Anspruch 1, dadurch gekennzeichnet, daß der Orientierungswinkel kleiner als 90° ist.
  3. Ofen nach einem der Ansprüche 1 oder 2, dadurch gekennzeichnet, daß:
    - die Turbine (11) um eine von vorne nach hinten verlaufende Achse (14) drehbar ist,
    - die Zwischenwand (4) Lufteintrittsöffnungen (5) in Bezug auf die Turbine für einen axialen Lufteintritt aufweist und Luftaustrittsöffnungen ( 6) in der Nähe ihrer Verbindung mit der Umfangswand (2) der Einfassung (1).
  4. Ofen nach Anspruch 3, dadurch gekennzeichnet, daß er eine einzige Turbine (11) in einer im wesentlichen zentralen Position nahe der hinteren Wand (15) des Ofens aufweist und einen Gasbrenner (9) mit der Ausbildung eines Rohres, das oberhalb der Turbine (11) mit einer im wesentlichen horizontalen Orientierung angeordnet ist, wobei die Austrittsöffnungen des Brenners (9) nach vorne in Richtung der Zwischenwand (4) orientiert sind.
  5. Ofen nach Anspruch 3, dadurch gekennzeichnet, daß er zwei Turbinen (111, 211) aufweist, die übereinander nahe der hinteren Ofenwand (15) angeordnet sind, und zwei Gasbrenner (109, 209) mit der Ausbildung eines Rohres, das jeweils oberhalb der einen und der anderen der Turbinen mit einer im wesentlichen horizontalen Orientierung angeordnet ist, wobei die Austrittsöffnungen der Brenner nach vorne in Richtung der Zwischenwand (4) orientiert sind.
  6. Ofen nach einem der Ansprüche 4 oder 5, dadurch gekennzeichnet, daß die Luftaustrittsöffnungen (6) in der Nähe der Verbindung der Zwischenwand (4) mit den Seitenwänden des Ofens vorgesehen sind.
  7. Ofen nach einem der Ansprüche 1 bis 6, dadurch gekennzeichnet, daß die Zwischenwand (4) ablösbar ist, um die Reinigung der funktionellen Elemente zu erlauben, die in dem zweiten Bereich (8) der Einfassung enthalten sind.
  8. Ofen nach einem der Ansprüche 1 bis 7, dadurch gekennzeichnet, daß in gerader Linie zu dem oder den Brennern (9) die Zwischenwand (4) mit thermischen Schutzplatten (19) bedeckt ist.
