Die Aufgabe des Lösungsmittels ist hierbei in erster Linie die Herabsetzung der Viskosität zur
- Erhöhung der Kristallisationsgeschwindigkeit (größere Diffusionskoeffizienten),
- Verbesserung der Selektivität (weniger Fremdmoleküleinschlüsse),
- Verbesserung der Dispergierfähigkeit,
- Verbesserung der Förderbarkeit und
- Erleichterung der Phasentrennung.

Nachteile dieses Verfahrens sind:
- 1) In beiden Fraktionierstufen werden aufwendig herzustellende Impfkristalle benötigt, welche exakt in der jeweils erforderlichen Kristallmodifikation (ß-Modifikation in der 1. Stufe, ß'-Modifikation in
der 2. Stufe) vorliegen müssen. - 2) In der zweiten Stufe werden, infolge der besonders hohen Ansprüche an die geforderte Kristallmodifikation, extrem lange Kristallisationszeiten von drei bis fünf Tagen benötigt.

Nachteile dieser Vorgehensweise sind:

Abgesehen davon, daß diese Versiegelungsprozedur umständlich, zeitraubend und daher wenig praktikabel erscheint, bewirkt eine solche Versiegelung eine Behinderung des Oleinabflußstromes während der Preßfiltration. - 2) Die beschriebenen, notwendigen Gesamtverweilzeiten des Materials innerhalb der Presse übersteigen bei weitem die üblicherweise angewendeten Preßdauern von etwa einer Stunde. Dadurch erhöht sich der Raumbedarf innerhalb der Presse bei vorgegebenem Durchsatz. Infolgedessen ist in Anbetracht der hohen Preßdrücke von etwa 30 bar mit besonders hohen Investitionskosten zu rechnen.

Ebenfalls zur Umgehung der oben beschriebenen Probleme bei hohen Kristallisationsgraden beschreibt GB 2 220 672 A ein Trockenfraktionierverfahren für weniger laurische und nichtlaurische Fette, das aus folgenden Teilschritten besteht:
- 1) Statische Kristallisation in flachen Behältern ohne Rührvorrichtung
- 2) Zerkleinerung des ausgehärteten Kristallkuchens derart, daß er in eine pumpfähige Konsistenz überführt wird
- 3) Preßfiltration zur Auftrennung des Kristallkuchens in eine kristalline Stearinfraktion und eine flüssige Oleinfraktion bei Drücken bis zu 28 bar.

Weitere Nachteile sind:
- Erfahrungsgemäß ist die statische Kristallisation geprägt von einer unerwünschten Inhomogenität dadurch hervorgerufen, daß die sich bildenden Kristalle höherer Dichte absinken und sich am Boden des Behälters kompaktieren. Hierdurch wird die für die Anlagerung weiterer Moleküle aus der Schmelze verfügbaren Kristalloberfläche verringert. Infolgedessen ist der Stofftransport behindert, was zumindest zu längeren Kristallisationszeiten führt, in ungünstigen Fällen sogar zu unerwünschten Triglyceridzusammensetzungen der Kristalle infolge kinetischer Effekte.
Dieses sei an folgendem Beispiel erläutert: Zur Herstellung besonders hochwertiger Palmmittenfraktionen, die vollständig mit Kakaobutter mischbar sind, kommt es darauf an, möglichst hohe Anteile an POP (1,3-dipalmitoyl-2-oleoyl-glycerin) zu kristallisieren, um das kakaobutterähnliche Schmelzverhalten zu erzielen. Die in Palmölfraktionen ebenfalls vorhandenen POO-Moleküle (1-palmitoyl-2,3-dioleoyl-glycerin) sind im Kristall unerwünscht, da sie zu einer Erweichung des Materials führen. Die Kristallisation von POO-Molekülen ist im Vergleich zu der von POP-Molekülen kinetisch gehemmt, d.h. POO-Moleküle weisen eine langsamere Anlagerungsgeschwindigkeit an vorhandene Kristalle auf als POP infolge sterischer Behinderung, die durch eine höhere Anzahl von Doppelbindungen im Molekül hervorgerufen wird.
Die bei GB 2 220 672 A angegebenen sehr langen Kristallisationszeiten in der Größenordnung von 25 bis 30 Stunden führen nach dem oben Gesagten zu unerwünscht hohen POO-Anteilen relativ zu POP. - In
GB 2 220 672 A wird als Kühlmedium vorzugsweise Luft mit einer konstanten Temperatur von 10-15°C zur Kristallisation von Palmolein angewendet. Hierdurch resultieren in der dort aufgegebenen, sogenannten linearen Kühlperiode zwischen 35 und 20°C Kühlraten von 6 bis 120°C pro Stunde. Diese vergleichsweise hohen Kühlraten treten in der sensiblen Keimbildungsphase auf und führen erfahrungsgemäß zu Kristallen mit erhöhtem Anteil an unerwünschten ß'-oder α-Modifikationen.
Darüber hinaus führen die auftretenden hohen Temperaturdifferenzen zu Beginn der Kristallisation zu relativ starker Unterkühlung des Materials, wodurch ein starkes Überschwingen der Öltemperatur zu Beginn einsetzender Kristallbildung resultiert. Dadurch treten während der beginnenden Kristallisation erneut überhöhte Temperaturdifferenzen auf, welche wiederum zu Kristallen unerwünschter Modifikation führen.
Des weiteren führen überhöhte Temperaturdifferenzen zu Beginn einer statischen Kristallisation erfahrungsgemäß zur Krustenbildung an der Phasengrenze, welche den Wärmeübergang behindert. Dadurch werden wiederum längere Kristallisationszeiten verursacht, wodurch die bereits beschriebenen Nachteile verstärkt werden. - Als weiterer, besonders hervorzuhebender Nachteil ist anzuführen, daß sich aus der Vorgehensweise nach
GB 2 220 672 A Kristalle ergeben, die nur Preßdrücken von maximal 28 bar standhalten. Solche Preßdrücke sind erfahrungsgemäß bei weitem unzureichend, wenn es gilt, besonders hochwertige Kakaobutterersatzstoffe mit steilen, kakaobutterähnlichen Schmelzkurven zu erzeugen, da es hier grundsätzlich darauf ankommt, eine bestimmte Triglycerid-Klasse ähnlichen Schmelzpunktes (ca. 32°C-35°C) so weit wie möglich anzureichern (z.B. POP bei Palmmittenfraktion oder LLL (Trilaurin) bei Palmkernöl). Die mechanische Fest/Flüssig-Trennung ist also umso besser, je mehr Flüssigkeit aus dem zwischen den Kristallen befindlichen Raum herausgepreßt wird.

These comparatively high cooling rates occur in the sensitive nucleation phase and, as experience has shown, lead to crystals with an increased proportion of undesired β'- or α-modifications.

GB 2 220 672 A results in crystals which can only withstand pressures of up to 28 bar. Experience has shown that such pressures are far from sufficient when it comes to producing particularly high-quality cocoa butter substitutes with steep, cocoa butter-like melting curves, since it is essential here to have a certain triglyceride class with a similar melting point (approx. 32 ° C-35 ° C) enrich as possible (e.g. POP for palm middle fraction or LLL (trilaurin) for palm kernel oil). Es ist Aufgabe der vorliegenden Erfindung, die bei den oben beschriebenen Verfahren auftretenden Nachteile zu vermeiden und Stoffgemischfraktionen aus preisgünstigen Rohstoffen wie z.B. Fettfraktionen aus Palmöl, Palmkernöl u.a. herzustellen, die aufgrund ihrer physikalischchemischen Eigenschaften relativ teure Stoffe, beispielsweise Kakaobutter, ersetzen können. Insbesondere soll eine Verdünnung des zu fraktionierenden Stoffgemisches durch Hilfsstoffe wie Lösungsmittel oder Netzmittellösungen vermieden werden. Darüber hinaus soll eine günstige Fraktionierung unterschiedlichster schmelzbarer, höhermolekularer, organischer Stoffgemische erreicht werden, insbesondere wenn während der Kristallisation so hohe Feststoffgehalte entstehen, daß die Suspension erstarrt. Sie besteht darin, noch außerhalb der Filtrationseinheit Kristalle zu erzeugen, deren Modifikation von hohem thermodynamischen Ordnungsgrad ist und die möglichst groß und von möglichst einheitlichem Durchmesser sind sowie nach dem Transfer in die Filtrationseinheit noch Preßdrücken von mindestens 30 bar standhalten bei gleichzeitig optimaler Entölbarkeit des sich während der Filtration verdichtenden Preßkuchens. Dazu wird bei einem Verfahren der eingangs angegebenen Art vorgeschlagen, daß nach dem Aufschmelzen des Stoffgemisches die drei Phasen Vorkühlung, Kristallkeimbildung und Kristallreifung durchfahren werden und jeweils eine besondere, der jeweiligen Phase angepaßte thermische oder thermische und mechanische Behandlung des Stoffgemisches erfolgt. Diese Vorgehensweise läßt sich vorzugsweise in einem Verfahrensablauf verwirklichen, der sich in folgende Schritte gliedert:
- 1) Vollständiges Aufschmelzen des Rohmaterials
- 2) Bewegte Vorkühlung gegebenenfalls einschließlich der Kristallkeimbildung unter definierten Wärmeübergangsbedingungen, gegebenenfalls in Kombination mit definierten Scherbedingungen
- 3) Statische Kristallreifung gegebenenfalls einschließlich der Kristallkeimbildung unter definierten Wärmeübergangsbedingungen, gegebenenfalls in Kombination mit definierten Scherbedingungen
- 4) Schonende Überführung in die Filtrationseinheit
- 5) Preßfiltration.

Zusätzlich zum definierten Wärmeübergang können definierte Scherverhältnisse eingestellt werden, um folgende Verbesserungen zu erzielen:

Überraschenderweise führt der Eintrag definierter Scherkräfte während der Keimbildung in Schritt 2) zu einer homogeneren Kristallisation im nachfolgenden Schritt 3), wenn dafür gesorgt wird, daß die von den bewegten Behältereinbauten auf das Material geprägten Schergeschwindigkeiten im gesamten Behälterraum von annähernd gleicher Größe sind. Unter homogener Kristallisation wird hier insbesondere die Bildung von Kristallen einheitlicher Größe verstanden.

- b) Installation mehrerer solcher Kühlschlangen übereinander, wobei der Abstand der Kühlspiralen voneinander konstant ist und den jeweils erforderlichen Wärmeübertragungswegen angepaßt wird,
- c) Installation von um die Behälterachse 1
rotierenden Rührerpaddeln 2, welche sich zwischenden Kühlspiralebenen 3 befinden.Die Rührerpaddel 2 sind so ausgeführt, daß sich der Abstand zwischen Paddelkante 4 und nächstgelegener Kühlspiralebene 3zum Behältermantel 5 hin proportional mit dem Radius vergrößert. Dadurch bleiben die auf das Stoffgemisch aufgebrachten Schergeschwindigkeiten, welche den Quotienten darstellen aus der Umfangsgeschwindigkeit eines jeweils betrachteten Paddelelementes und dem Abstand der jeweiligen Paddelkante 4zur Kühlspiralebene 3, konstant.
