Abstract

A pourable oleaginous shortening of normally solid gly prides able to exist in a stable beta phase and comprising 1-20 per cent. by weight, of the shortening in a normally liquid glyceride vehicle is obtained by mixing the solid and liquid glycerides at a temperature high enough to melt all of the solids, cooling, in not more than three minutes, to below the alpha melting temperature of the solids, and tempering the mixture to convert non-beta crystals to a beta phase so that at least 60 per cent. of the solids are in the beta phase. The liquid vehicle can be derived from one or more of the oils from cottonseed, soybean, peanut, rapeseed, sesame seed, sunflower seed, or an oil fraction obtained from palm oil, lard or tallow, or a low molecular weight synthetic fat (defined). The solids of iodine value not above 12 are fats made by hydrogenating the oils from cottonseed, sunflower seed, linseed, hazelnut, soybean, peanut, olive, corn, or palm, or lard or tallow or their mixtures or they can be mixtures of mono-, di-, and tri-glycerides formed by reacting saturated triglycerides with excess glycerine, or they can consist primarily of triglycerides, tristearin, tripalmitin or palmito distearin. Prior to crystallization, the liquid mixture can be seeded with beta phase crystals at a temperature lower than their melting point. Preferred tempering temperature is 90 DEG -120 DEG F., and the mixture may be added during or after such tempering. Specifications 574,807, 660,610 and 810,277 are referred to.
