Abstract

Se describen polinucleótidos y polipéptidos involucrados en la vía biosintética de ácidos clorogénicos en la planta de café. También se describen métodos para uso de estos polinucleótidos y polipéptidos para la manipulación de sabor, aroma y otras características de los granos de café así como la protección de plantas de café contra enfermedades o tensión oxidativa.
