Abstract

Раскрывается усовершенствованный способ пастеризации для пастеризации микробных клеток. Способ включает три стадии: первую стадию нагревания, вторую стадию плато, на которой клетки выдерживают при (максимальной и) постоянной температуре и третью стадию охлаждения. Обе стадии нагревания и охлаждения являются быстрыми при нагревании клеток от 40 до 80°C, в течение не более 30 мин на стадии нагревания. Скорость нагревания составляет по меньшей мере 0,5°C/мин и во время охлаждения по меньшей мере -0,5°C/мин. Максимальная температура на стадии плато составляет от 70 до 85°C. При представлении протокола пастеризации в виде графика зависимости времени (t, мин) от температуры (T, °C) получают трапецию, имеющую площадь менее 13000°C∙мин. Это приводит не только к меньшим вложениям энергии (и таким образом к снижению затрат), но также к лучшему качеству (и менее окисленному) масла, имеющему значение перекисного числа (POV) менее 1,5 и значение анизидинового числа (AnV) менее 1,0.
