Abstract
Настоящее изобретение относится к способу и оборудованию для экстракции соединений из винограда с помощью ультразвука, генерируемого соноплатами, подсоединенными к стенкам трубки/трубопровода, через который проходит давленый виноград. Во время экстракции передача фенолов, ответственных за цвет, от твердой массы (кожица) к жидкой массе после давки винограда происходит вследствие такого процесса, как кавитация, с помощью которого разрываются клетки кожицы винограда, а фенольные соединения, ответственные за цвет, входят в жидкую среду для интеграции в указанной среде и улучшения цвета вина.
