Устройство для осуществления способа ферментации включает коаксиально расположенные электроды, подсоединённые к источнику высоковольтного напряжения, и размещённый между ними диэлектрический барьер, что представляет собой трубчатый озонатор, гибкие шланги для подачи озоновоздушной смеси, гигротемпер, обеспечивающий относительную влажность и температуру в помещении для ферментации.
