Abstract
A method for premium black pekoe tea prepa¬ra¬tion provides tea foliage withering, twisting, mul¬tistage sorting with small particles selection, and cutting of coarse fraction with twisting and crus¬hing thereof received at last step of sorting, by tre¬atment, mixing with water, ozone insufflation of (15-20) х 10-5 ml/l concentration at the temperature of 22-24oС executed by means of hydrotemper on fermentation step at product condition operational control.
