Abstract
Настоящее изобретение обеспечивает жидкую композицию, включающую: (i) аспарагиновую протеазу, и (ii) неорганическую соль и/или полиспирт; композицию, в которой суммарная концентрация сорбата, бензоата и сложного эфира алкилпарагидроксибензоата составляет меньше чем 0,010 мол/л; стандартный чашечный счет ≤100 в 1 мл; счет дрожжей ≤10 в 1 мл; и счет плесени ≤10 в 1 мл. Композиция может быть использована в качестве коагулянта в производстве сыра.
