Claims (11)

1. Fremgangsmåde til fremstilling af D-fructose ud fra D-glucose kendetegnet ved, at, i en one-pot-reaktion, a) D-glucose oxiderer enzymatisk til D-glucoson med en pyranose-2-oxidase, og b) D-glucoson reduceres enzymatisk til D-fructose med en reduktase, hvor der især i trin b) anvendes en redox-cofaktor.
2. Fremgangsmåde ifølge krav 1, kendetegnet ved, at fremgangsmåden foregår uden isolering af mellemprodukter.
3. Fremgangsmåde ifølge krav 1, kendetegnet ved, at forekommende FI2O2 fjernes ved hjælp af en katalase.
4. Fremgangsmåde ifølge et af kravene 1 til 3, kendetegnet ved, at der med henblik på reduktionen af D-glucoson til D-fructose anvendes en xylose-reduk-tase.
5. Fremgangsmåde ifølge et af kravene 1 til 4, kendetegnet ved, at der, især ved reduktionen af D-glucoson til D-fructose, anvendes redox-cofaktorer, især NAD(P)H, især, at enzymet, som anvendes i trin b), er NADP(H)-afhængigt.
6. Fremgangsmåde ifølge et af kravene 1 til 5, kendetegnet ved, at redox-cofaktorerne NAD(P)+ og/eller NAD(P)H tilsættes ved reaktionen af D-glucose til D-fructose.
7. Fremgangsmåde ifølge et af kravene 5 eller 6, kendetegnet ved, at anvendte redox-cofaktorer underkastes en genanvendelse, især ved hjælp af et egnet cofaktor-regenereringssystem.
8. Fremgangsmåde ifølge et af kravene 5 til 7, kendetegnet ved, at redox-cofaktoren regenereres ved anvendelsen af co-faktorerne NAD(P)H/NAD(P)+, især ved reduktionen af D-glucoson til D-fructose, under anvendelse af et co-substrat, især udvalgt blandt en alkohol, mælkesyre og dennes salte, pyro-druesyre og dennes salte, oxygen, hydrogen og/eller myresyre og dennes salte.
9. Fremgangsmåde ifølge et af kravene 5 til 8, hvor redox-cofaktoren regenereres ved hjælp af et redoxenzym, især ved hjælp af en alkoholdehydroge-nase.
10. Fremgangsmåde ifølge et af kravene 1 til 9, kendetegnet ved, at den afvikles i henhold til det følgende reaktionsskema 2
i hvilket LkADFI betegner en alkoholdehydrogenase, især en alkoholdehydro-genase fra Lactobacillus kefir, som er NADP(FI)-afhængig.
11. Fremgangsmåde ifølge et af kravene 1 til 10, kendetegnet ved, at den fremstillede D-fructose reageres yderligere til furanderivater.
