Claims (9)
1. Proteinisolat med et proteinindhold på mindst 90 % protein, omfattende: (i) en første klasse af proteiner med en molekylvægt mellem 225 og 275 kDa, hvilken første klasse af proteiner omfatter mellem 50-70 %; (ii) en anden klasse af proteiner med en molekylvægt mellem 40 og 60 kDa, hvilken anden klasse af proteiner omfatter mellem 3-8 %; (iii) en tredje klasse af proteiner med en molekylvægt mellem 20 og 40 kDa, hvilken tredje klasse af proteiner omfatter mellem 2-6 %; (iv) en fjerde klasse af proteiner med en molekylvægt mellem 7 og 15 kDa, hvilken fjerde klasse af proteiner omfatter mellem 10-20 %; (v) en femte klasse af proteiner med en molekylvægt mellem 3 og 10 kDa, hvilken femte klasse af proteiner omfatter mellem 10-20 %; og (vi) en sjette klasse af proteiner med en molekylvægt på mindre end ca. 5 kDa, som omfatter mindre end ca. 1 % af proteinisolatet.
2. Proteinisolat ifølge krav 1, hvor isolatet er afledt fra oliefrømel indeholdende opløselige og uopløselige proteiner, hvor de uopløselige proteiner omfatter et proteinkoncentrat med et proteinindhold på mindst 60 % og mindre end 90 % protein, omfattende: i) en første proteinfraktion omfattende mellem 30 % og 70 % 2S-protein; og ii) en anden proteinfraktion omfattende mellem 20 % og 50 % 12S-protein.
3. Proteinisolat ifølge krav 2, hvor den første proteinfraktion omfatter mellem 45 % og 55 % 2S-protein, og den anden proteinfraktion omfatter mellem 35 % og 40 % 12S-protein.
4. Fremgangsmåde til fremstilling af et proteinisolat ifølge krav 1 eller 2 ud fra oliefrømel, omfattende: i) at blande oliefrømelet med et første blandingsopløsningsmiddel til dannelse af en blanding; ii) eventuelt at behandle blandingen med fytase ved en temperatur og en pH-værdi, der er egnet til fytaseaktivitet; iii) eventuelt at justere pH-værdien af blandingen til solubilisering af proteiner i blandingen; iv) at udsætte blandingen for en g-kraft, der er tilstrækkelig til at separere blandingen til dannelse af a) en fiberfraktion og b) en proteinfraktion omfattende (i) en uopløselig proteinfraktion og (ii) en opløselig proteinfraktion; v) at separere den uopløselige proteinfraktion fra den opløselige proteinfraktion til genvinding derfra af et uopløseligt proteinkoncentrat og et opløseligt proteinekstrakt; og vi) at udsætte det opløselige proteinekstrakt for membranfiltrering til genvinding derfra af proteinisolatet.
5. Fremgangsmåde ifølge krav 4, hvor det første blandingsopløsningsmiddel omfatter vand.
6. Fremgangsmåde ifølge krav 4 eller 5, hvor blandingen udsættes for en g-kraft på mellem 100 g og 500 g.
7. Fremgangsmåde ifølge krav 6, hvor blandingen udsættes for en g-kraft på mellem 170 g og 350 g.
8. Fremgangsmåde ifølge et hvilket som helst af kravene 4 til 7, hvor oliefrømelet omfatter rapsmel.
9. Fremgangsmåde ifølge et hvilket som helst af kravene 4 til 8, hvor proteinisolatet hydrolyseres til fremstilling af peptider og frie aminosyrer.
