Herstellung eines besonders zarten Lachsersatzproduktes. Durch längeres Salzen des
Fleisches, insbesondere von Blaufischen, wird in bekannter Weise ein Lachsersatzprodukt
dadurch 'hergestellt, daß die gesalzenen Fischstücke von einer Aufschnittmaschine
in dünne 'Scheiben geschnitten werden. Diese Scheiben sind weiß, zähe und zu salzig.
Sie werden so nicht von dem Verbraucher gegessen. Um die lachsartige Farbe und die
Entsalzung zu erreichen, werden die Scheiben in einer Farblösung getönt und gewässert.
Hierbei wird derart verfahren, daß die beim Aufschneiden der Fischstücke von der
Maschinenbedienung übereinandergelegten Scheiben einzeln von Hand aufgenommen und
einzeln nebeneinander auf Platten ausgelegt werden. Diese mit Fleischscheiben belegten
Platten werden waagerecht in ein Farbbad getaucht. Nach dem Färben wird die noch
anhaftende Lösung des Farbbades mittels eines Luftstromes abgeweht und die Scheiben
einzeln darauf in Öl in Dosen eingelegt. Diese Arbeitsweise hat den Nachteil, daß
durch die große Oberfläche der weit auseinandergebreiteten Scheiben durch Keime
der Luft und durch das häufige Berühren mit den Händen das Fleisch infiziert wird.
Hierdurch kann ein vorzeitiges Verderben des empfindlichen Fischfleisches eintreten.
Besonders wertvoll ist bei der Fischverarbeitung die Kürze der Verarbeitungszeit.
Durch die große Oberfläche und die umgebende Luft trocknen ferner die Scheiben leicht
aus, wodurch feste und teilweise zähe- Produkte entstehen. Nach vorliegender Erfindung
wird ein sehr zartes Erzeugnis der in Scheiben geschnittenen Fischstücke dadurch
gewonnen, daß übereinanderliegende Fischscheiben in senkrechter oder stark geneigter
Lage in eine Farb- und Entsalzlösung getaucht werden und in übereinanderliegenden
Stapeln gegebenenfalls in kaltem Rauch ausquellen. Für den Fall, daß die ungefärbten
Scheiben durch längeres Liegen aneinanderkleben, wodurch eine gleichmäBige Färbung
verhindert wird, werdenunter die senkrecht nebeneinander im Farbbad liegenden Fleischscheiben
Luftblasen eingeleitet: Diese Luftblasen treiben die aneinandergeklebten Scheiben
