Es ist bekannt, dafs Kohlensäure, besonders wenn sie unter Druck angewendet wird, sehr gut konservirt, dafs jedoch die Farbe und der frische Geruch der meisten Nahrungs- und Genufsmittel bei der Behandlung mit Kohlensäure verloren geht oder verändert wird. Diese Uebelstände sollen durch vorliegendes Verfahren dadurch vermieden werden, dafs Kohlensäure gleichzeitig mit einer Lösung angewendet wird, welche Kochsalz, Milchzucker und etwas borsaure Magnesia oder Milchzucker allein mit etwas borsaurer Magnesia enthält. Die Lösungen werden durch Kohlensäure sterilisirt, in luftdicht verschliefsbare Behälter gebracht und die zu konservirenden eiweifs- oder eiweifsstoffhaltigen Nahrungs- oder Genufsmittel so in die Lösung eingelegt, dafs sie von derselben ganz bedeckt sind. Hiernach wird ein solcher Behälter luftdicht verschlossen, die Luft durch Kohlensäure ausgetrieben und das Innere des Behälters mit Kohlensäure gefüllt. Die Kohlensäure kann mit oder ohne Druck An-. Auf diese Weise gelingt es, selbst die stärksten Fleischstücke innerhalb 12 bis 36 Stunden durchzupökeln, wobei die Pökelung am schnellsten bei einer Temperatur von 30 bis 350 C. vor sich geht. Nach beendetem Pökelprocefs wird die Salzsäure abermals durch Kohlensäure sterilisirt und gesättigt, wonach die durch Kohlensäure bis auf io° C. abgekühlte und sterilisirte Lösung nochmals kurze Zeit unter Kohlensä'uredruck gestellt wird.
