Sie besteht darin, daß man das zu behandelnde Eiweiß mit alkalisch gemachtem Wasser aufschlämmt, die erhaltene Suspension unter Zusatz von mit Wasser mischbaren organischen Lösungsmitteln kurz erwärmt, hierauf weitere Mengen mit Wasser mischbarer organischer Lösungsmittel hinzufügt und das Gemisch schließlich mit Säure bis zum Neutralpunkt versetzt. Das ausgefällte Prödukt erweist sich nach dem Trocknen, z. B. mittels Alkohol und Äther und anschließendem Aufenthalt im Trockenschrank, in seinem Verhalten beim Backen dem Hühnereiweiß ebenbürtig. Durch den Gehalt an mit Wasser mischbaren Lösungsmitteln wird offenbar die sonst bei der Erwärmung beobachtete Denaturierung hintangehalten. Beispiele i. io 1 Magermilch werden mit 48o ccm i n-HCl angesäuert. Es tritt Flockung ein. Der Niederschlag wird abgetrennt und in 2 1 Wasser unter Zusatz von 540 ccm n-Na O H angeschlämmt.
