Während Tannin mit gelatinierenden Mitteln, wie z.B. Leim, Gelatine, Agar Agar, Seetangextrakten oder Stärkelösungen, sofort Fällungen erzeugt, bleiben Lösungen der genannten Holzgerbstoffextrakte mit den erwähnten Geliermitteln sowohl in der Kälte als in der Wärme klar.
