Während Tannin mit gelatinierenden Mitteln, wie z.B. Leim, Gelatine, Agar Agar, Seetangextrakten oder Stärkelösungen, sofort Fällungen erzeugt, bleiben Lösungen der genannten Holzgerbstoffextrakte mit den erwähnten Geliermitteln sowohl in der Kälte als in der Wärme klar. Dies war höchst überraschend, da die Fällbarkeit insbesondere von Leim und Gelatine bisher ganz allgemein für Gerbstoffe als charakteristisch anzusehen war.
