Je höher die bei der Gärung entstehende Temperatur ist, und je häufiger die mechanische Vermischung des sich an der Oberfläche bildenden Tresterhutes mit dem gärenden Wein stattfindet, um so gründlicher i ist die Auslaugung des in den Beerenhülsen befindlichen roten Farbstoffs. Durch die niedrige Herbsttemperatur erhält aber d:e Maische oft nicht die nötige Wärme, oder durch niedrigeres Mostgewicht wird die erforderliche Erwärmung hintangehalten, oder es wird durch Verwendung zu großer Gärgefäße die Zerteilung, und Vermischung des Tresterhuts mit dem werdenden Wein unmöglich gemacht.
