Description
Process for increasing the brewhouse yield in breweries It is known that the so-called smooth waters that accumulate at the end of the lautering process continue to hull the husks exploit and, in addition to the valuable extract, a number of flavor-impairing substances Contain substances such as silica, tannins, etc., which have an unpleasant, bitter appearance Taste of the beers. With these low-percentage smooth waters many coolants go into the wort, which has an adverse effect on fermentation can be. After all, the smooth waters are calling because of their high tannin content an undesirable strong coloring of the wort emerges.
About these negative influences of the smooth waters on the quality of the beer to turn it off, it has hitherto been either more or less low Let concentration run away, but with correspondingly high losses in yield connected, or the smooth waters have been used to mash in dark brews, in which the mentioned changes in taste do not appear so strongly.
The aim of the invention is the total extract content of the smooth water to use and to supply the brewing pan, without the different from the point of view the quality of the beer from harmful or undesirable substances get into the beer.
The invention consists in treating the smooth water in the warm or in the cold with strong adsorbents and these are then removed again by precipitation, filtration or centrifugation. The thus treated Glatt water show no decrease of the extract content compared with the untreated smooth watering, differ from this, in an advantageous manner in that they have a substantially lower color depth without the undesirable reddish tint and also substantially freed of turbidity substances and in gustatory sense are far superior to untreated flat waters. Embodiment with an extract content of 4 0/0 to flowing out of the lauter tun Glatt waters are by a Eskikühler that they passed to about 5 'C or below cools in a special clarifier, in which an additive of 1: 5 grams of the adsorbent , calculated on the hectolitre of smooth water. As an adsorbent, for. B. bentonite can be used. But you can also use other strong adsorbents, such as kieselguhr, kaolin, asbestos, silicic acid hydrate, etc. The addition of the adsorbent in the calculated amount takes place at the same time as the smooth water begins to flow into the clarifier. From this vessel, the smooth waters are fed through a filter into the brewing pan about 15 minutes after the last portions have been added. There is no loss of time in the brewhouse work with this method of operation. The adsorbent can be added and removed continuously; to be able to work in uninterrupted operation. The smooth waters can also be pumped around for this purpose with constant addition of the agent.
