Verfahren zur Gewinnung von Citronensäure Citronensäure ist, bisher hergestellt worden aus Citrusfrüchten oder aus Zucker mit Hilfe von Schimmelpilzen. Eine neue Quelle für Citronensäure hat sich ergeben aus der Beobachtung, daß Hefen, z. B. Bierhefen, Weinhefen, Apiculatus-, Torula-, Monili.a-, Mycodermahefen u. dgl., imstande sind, aus Essigsäure und Sauerstoff Citroneusäure zu bilden. Die Essigsäure kann als freie Säure, so wie sie z. B. durch natürliche Säuerung entsteht, oder als Salz eingesetzt werden. Neben der Citronensäure entstehen dabei noch beträchtliche-Mengen Bernsteinsäure. Wesentlich für einen genügenden Sauerstoffumsatz der Hefen ist, die Hefezellen reichlich mit dem Sauerstoff in Berührung zu bringen durch Rühren, geeignetes Umpumpen o. dgl.Process for obtaining citric acid is citric acid, so far made from citrus fruits or from sugar with the help of molds.
