Abstract
In the production of milling products for human consumption, it is proposed that the oxidation, particularly of the fat constituents and vitamins, occurring during milling operations, and also during storage or intermediate storage, be effectively prevented by maintaining a low-oxygen or oxygen-free atmosphere. In this manner, very high value milling products, particularly those containing the highly valuable germ fractions, can be produced and distributed by means of the existing economical production and distribution systems. In particular, e.g. full nutritional value ready-to-use baking mixes can be produced in the mill. These are virtually unchanged even after a considerable storage time of weeks or months, and contain substantially all the constituents of the freshly-milled cereal. <IMAGE>
